A beautiful read..👌👌😍😍👍❤️❤️
So, the festival of DIWALI 🪔has gone as suddenly as it had arrived. In the distance, you can still hear the occasional crackle of a stray rocket or bomb, and your colourful diyas now protectively hold tiny pools of melted wax and ash. Your rangolis are still radiant,albeit slightly dishevelled. As you walk on the streets this morning, you catch sight of the night's celebrations all around, and you probably see or hear yourself and your loved ones laughing, in that very spot that someone cracked a joke. Friends and extended family have now gone back home, making promises to meet again soon. The sweets and savouries have now been stored away,and will be served at tea-time, as mementoes of diwali. The clothes and jewellery that you chose with great care, that made their grand appearance yesterday, have been put away for the next big occasion. As all the festivities slowly recede into the distance, I ask you for a promise. That in your heart, you will let the lights remain. That in spirit, and in being, your celebrations will continue. That you will attempt to meet your loved ones a little more often. And that the laughter that came in abundance over this festival will make an appearance everyday.

Here's wishing you all once again a happy festive spirit, all year round. Lots of love and laughter.

Sorry friends have not been posting regularly of late 🙏it’s extremely hot 😭😭so not much into special cooking these days😜😜just simple daal chaawal🤣🤣

I cook mostly Punjabi food and you are such an inspiration. From the simplest of recipes to the slightly exotic ones, each of your dishes are a visual and gastronomic delight! Winter special 😋
Sarson ka saag👌
No flters 😜straight from the kadhai 😀
Every household has its own recipe for this but this is mine and have always been making it this way only.
SARSON KA SAAG....
Ingredients:-
2 bunches or about 1 kilo Sarson saag
1 bunch or about 1/2 kilo palak
250 gms bathua or you may add 1 mooli and 250 gms of its leaves instead
2 tbsp chopped ginger
2 pods garlic
3-4 green chillies
Salt to taste
2-3 tbsp makki atta( you may add normal atta too instead if makki atta is not available but authentically it’s makki😁)

For tadka-
3 tbsp desi ghee ( you may use mustard oil too if you wish to)
5 cloves of garlic finely chopped and 2 thinly sliced
2 inches piece of ginger finely chopped
2 green chillies finely chopped
Red chilli powder as per your taste
1 tsp jeera

Let’s get cooking 😊
Method:-
Clean, chop and wash the Sarson, Palak and Bathua or mooli and it’s leaves
Pressure cook by adding salt, ginger, garlic, green chillies and half cup water fir about 10 minutes on . Let cool a bit and grind with a hand blender or in a mixie. Try not to make a very fine paste of it.
Add makki atta made into a slurry to the saag and and check consistency... should be little thin as we have to cook the atta in the saag. Now keep the cooker on low flame. Stir occasionally. Keep it covered. Simmer fir about 10-12 minutes till a good thick consistency is reached and by this time the raw atta would have been cooked too. Check salt and finally finish the cooking.
For tadka :-
Heat ghee in a pan. Brown the sliced garlic and remove fir garnish. Also the flavor of the burnt garlic is awesome!!!! Now splutter the jeera . Add chopped ginger garlic and chillies. Fry till golden. Add red chili powder . Pour this tadka to the saag and mix well. Serve garnished with the sliced and fried garlic along with makki rotis ghee maar ke😅and gud ( jaggery)

Note:
Some people use onions and tomatoes in this saag but I don’t . So plz feel free to tweek the tadka as per your choice 😁👍

MAKKI ROTIS....
For making Makki rotis….Take how much ever makki ka Atta you need.
Pour BOILING WATER to it... yes....as in rolling boiling!!!....into it to bind... plz don’t flood it…just with andaaz!!!
Mix with a spoon to bring it together .
Let it cool for about a minute or two till you can touch it with your hands.
Now bring together the dough and knead it till it all comes together without cracks .
Then make a peda.
Take a plastic sheet and place on chakla or make direct on chakla..
Take the peda and dust it in flour and roll out on sheet using light movements with the rolling pin.
Roll it as thin as you want👍You will be able to. ...!!!
Then roast it on a tawa like normal wheat ones.
And puff them up directly on the flame of your gas stove.
And they will puff up every time.
Smear with ghee.
The trick is the Boiling water used.

LEMON CHICKEN WITH CREAM SAUCE 😋
Recipe:
Chicken thigh - 2 whole or cut into 2 pieces each
Lemon juice- 2 tablespoons
Zest of 1 lemon
Ginger garlic paste- 1 teaspoon
Pepper-1 teaspoon
Salt to taste
Fresh cream or malai- 3-4 tablespoons
1 tablespoon each of butter and oil

Method:
Marinade the chicken thighs with all the above ingredients except the cream / butter and oil and leave for minimum 1 hour . I normally keep it for 3-4 hours in fridge.
In a non stick pan add 1 tsp butter and 1 tsp oil and heat. Add the marinated chicken thighs along with all the juices into the pan and cook on medium heat searing well from all sides . Cook till all juices are absorbed and the chicken is nicely cooked. This doesn’t take too long… just about 5-6 minutes maximum or less depending on the size. The chicken should have a nice golden caramelisation on it. Once cooked… add the cream or fresh malai and give a nice stir coating all the pieces of the chicken with the sauce. Check seasoning. May add a little chopped coriander now. Do not cook and reduce the sauce too much or will curdle .
Serve hot garnished with a sprig of coriander with some garlic bread or any other side dish or bread of your choice.
This is a super simple and a delicious dish.

MAC AND CHEESE 🤩🧀 made with loads of veggies😅😅

RECIPE:
2 cups of macaroni boiled al dante ( till just cooked but not fully)
A bowl or more ...Mix of all possible veggies you can get your hands on..!!! I've used carrots/ French beans/ peas/ cauliflower and corn ( semi boil or microwave the veggies till half done)
For the white sauce.. take 2 tablespoons of maida and a tablespoon of oil in a pan and roast it till lightly cooked . Grate 2 cloves of garlic in it at this time. It will cook slightly in the hot mixture of maida/ oil imparting a lovely aroma in the sauce. Now add 2 cups of chilled milk in it stirring all the time to avoid lumps. Have added 2 cheese cubes grated at this stage along with salt/ pepper and chilli flakes. Mix well till sauce comes together and raw taste of maida disappears. You may add more milk depending on the consistency of the sauce you desire.
Now mix in all the boiled vegetables and macaroni in the white sauce and pour in baking dish. Sprinkle some grated on top to give it a golden texture on baking. Bake in oven on grill mode at high till light golden colour appears on top. READY👍enjoy piping hot with some soup .😋😋🥂🍽
