Idly Recipe

Ingredients

2 cups idli rice

1 cup urad dal

Β½ tsp fenugreek seeds

Salt to taste

Water as needed

Method

1. Soak rice and fenugreek seeds together for 6 hours.

2. Soak urad dal separately for 4–6 hours.

3. Grind urad dal into a fluffy batter.

4. Grind rice to a slightly coarse batter.

5. Mix both batters, add salt, and ferment overnight.

6. Pour into greased idli molds and steam for 10–12 minutes.

Dosa Recipe

Ingredients

2 cups dosa rice

Β½ cup urad dal

2 tbsp poha (flattened rice)

Salt to taste

Method

1. Soak rice, urad dal, and poha for 4–6 hours.

2. Grind into a smooth batter.

3. Ferment overnight.

4. Add salt and mix well.

5. Spread a ladleful of batter on a hot tawa.

6. Drizzle a little oil and cook until golden and crisp.

Ingredients

1 cup urad dal

1 tsp black pepper

1 tsp cumin seeds

1 tbsp chopped curry leaves

1 green chili, finely chopped

Salt to taste

Oil for frying

Method

1. Soak urad dal for 4 hours.

2. Grind with very little water into a thick fluffy batter.

3. Add pepper, cumin, curry leaves, chili, and salt.

4. Shape into doughnuts with a hole in the center.

5. Deep-fry until golden brown and crisp.

Sambar Recipe

Ingredients

Β½ cup toor dal

1 onion, sliced

1 tomato, chopped

1 cup mixed vegetables (drumstick, carrot, brinjal, etc.)

1 tbsp sambar powder

Small lemon-sized tamarind

Salt to taste

1 tsp mustard seeds

Curry leaves

2 dried red chilies

1 tbsp oil

Method

1. Cook toor dal until soft and mash well.

2. Extract tamarind juice.

3. Boil vegetables in tamarind water with sambar powder and salt.

4. Add cooked dal and simmer for 10 minutes.

5. Temper mustard seeds, red chilies, and curry leaves in oil.

6. Pour over the sambar and serve hot.

Method

1. Grind coconut, roasted chana dal, green chilies, ginger, salt, and water to a smooth paste.

2. Heat oil and splutter mustard seeds.

3. Add red chili and curry leaves.

4. Pour the tempering over the chutney.
