1. Beef Chow Fun
Ingredients
* 400 g fresh wide rice noodles
* 250 g beef, thinly sliced
* 2 cups Chinese broccoli (g*i lan)
* 2 tbsp soy sauce
* 1 tbsp oyster sauce
* 1 tsp sesame oil
* 2 cloves garlic, minced
* 1 tbsp vegetable oil
* ½ tsp white pepper
* 1 green onion, sliced
Method
1. Marinate beef with 1 tbsp soy sauce for 15 minutes.
2. Heat oil in a wok and stir-fry beef until browned.
3. Add garlic and Chinese broccoli.
4. Add rice noodles, remaining soy sauce, oyster sauce, sesame oil, and white pepper.
5. Toss on high heat for 3–4 minutes.
6. Garnish with green onion and serve hot.

2. Singapore Rice Noodles (Shrimp & Egg)
Ingredients
* 250 g rice vermicelli
* 200 g shrimp, peeled
* 2 eggs, beaten
* 1 carrot, julienned
* 1 cup bean sprouts
* 2 green onions, chopped
* 1 tbsp curry powder
* 2 tbsp soy sauce
* 1 tbsp vegetable oil
* Salt to taste
Method
1. Soak rice vermicelli in warm water for 10 minutes.
2. Scramble eggs and set aside.
3. Stir-fry shrimp until pink.
4. Add carrot, bean sprouts, and green onions.
5. Add noodles, curry powder, soy sauce, and salt.
6. Mix in scrambled eggs.
7. Toss well and serve hot.

3. Chinese Beef Rice Noodle Soup
Ingredients
* 250 g rice noodles
* 300 g beef slices
* 6 cups beef broth
* 2 bok choy
* 2 green onions, sliced
* 1 tbsp soy sauce
* 1 tsp sesame oil
* 2 cloves garlic, minced
* ½ tsp white pepper
* Fresh cilantro
Method
1. Cook rice noodles according to package instructions.
2. Bring beef broth to a boil.
3. Add garlic, soy sauce, sesame oil, and white pepper.
4. Add beef slices and cook for 2–3 minutes.
5. Blanch bok choy separately.
6. Place noodles in bowls and pour hot broth over them.
7. Top with beef, bok choy, green onions, and cilantro.

4. Spicy Chicken Rice Noodles
Ingredients
* 250 g rice vermicelli
* 250 g chicken breast, sliced
* 1 red chili, sliced
* 1 cup bean sprouts
* 2 tbsp chili oil
* 2 tbsp soy sauce
* 1 tbsp oyster sauce
* 2 cloves garlic, minced
* 1 green onion, sliced
* Salt to taste
Method
1. Soak noodles in warm water until soft.
2. Stir-fry chicken until cooked through.
3. Add garlic and red chili.
4. Add noodles, bean sprouts, chili oil, soy sauce, and oyster sauce.
5. Toss on high heat for 3–4 minutes.
6. Garnish with green onion and serve.

5. Chicken & Vegetable Mei Fun
Ingredients
* 250 g rice vermicelli
* 200 g chicken breast, sliced
* 2 cups shredded cabbage
* 1 carrot, julienned
* ½ cup mushrooms, sliced
* 2 tbsp soy sauce
* 1 tbsp oyster sauce
* 1 tbsp vegetable oil
* 2 cloves garlic, minced
* 1 green onion, sliced
Method
1. Soak vermicelli in warm water.
2. Stir-fry chicken until lightly browned.
3. Add garlic, cabbage, carrot, and mushrooms.
4. Cook for 3–4 minutes.
5. Add noodles, soy sauce, and oyster sauce.
6. Toss until everything is well combined.
7. Garnish with green onion and serve hot.

6. Sichuan Spicy Rice Noodles
Ingredients
* 250 g wide rice noodles
* 200 g ground pork or beef
* 2 tbsp chili bean paste (Doubanjiang)
* 2 garlic cloves, minced
* 2 cups bok choy
* 1 tbsp soy sauce
* 1 tsp sesame oil
* 1 tsp sugar
* ½ tsp Sichuan peppercorns
* 1 green onion, chopped
Method
1. Cook rice noodles and set aside.
2. Stir-fry ground meat until browned.
3. Add garlic and chili bean paste.
4. Stir in soy sauce, sesame oil, sugar, and Sichuan peppercorns.
5. Add bok choy and cook until tender.
6. Toss with cooked noodles.
