# COLORFUL CUCUMBER PANEER ROLL SALAD 🥒🌈

A fresh, crunchy, and protein-rich salad that's as beautiful as it is delicious!

INGREDIENTS:

2-3 large cucumber
100 g paneer
¼ red bell pepper, finely chopped
¼ green bell pepper, finely chopped
¼ yellow bell pepper, finely chopped
Salt, to taste
Black pepper, to taste
Toothpicks, for securing

METHOD:
Wash the cucumber and slice it lengthwise into thin, long strips using a vegetable peeler.

In a bowl, crumble the paneer and mash it lightly with a fork.

Add the finely chopped red, green, and yellow bell peppers.

Season with salt and black pepper, then mix well to prepare the filling.

Place a spoonful of the paneer mixture at one end of each cucumber strip.

Gently roll the cucumber strip around the filling.

Secure each roll with a toothpick.

Arrange the rolls on a serving platter and serve chilled.

# 🍫WHEAT CHOCOLATE PIZOOKIE WITH CASSATA ICE CREAM ...
🍨
A warm, gooey cookie-meets-brownie dessert made with wheat flour and loaded with melted dark chocolate. Best served fresh with a scoop of chilled cassata ice cream.

INGREDIENTS:

1½ cups wheat flour
2 tbsp corn flour
1 tsp baking soda
½ cup butter (softened)
¾ cup brown sugar
1 tsp vanilla extract
Dark chocolate chunks as needed
Chocolate chips as needed
Cassata ice cream for serving

METHOD:

Preheat the oven to 180°C. Grease a baking tin or small skillet lightly with butter.

In a bowl, mix together:

wheat flour
corn flour
baking soda

In another large bowl,

whisk softened butter and brown sugar until smooth and creamy.

Add vanilla extract. Mix well until combined.

Gradually add the dry ingredients into the wet mixture.

Using the cut-and-fold method, gently combine to form a thick batter. Do not overmix.

Pour half of the batter into the greased baking tin.

Add a layer of dark chocolate chunks and some chocolate chips.

Spread the remaining batter on top and finish with more dark chocolate chunks and chocolate chips.

Bake for about 30 minutes at 180°C until the top looks golden and slightly crisp while the center stays soft and gooey.

Let it rest for 5 minutes after baking.

SERVING SUGGESTION:

Serve the warm pizookie immediately with a scoop of chilled cassata ice cream. The hot chocolate center and cold ice cream create the perfect dessert combination.

🥦MEXICAN BEETROOT BROCCOLI SALAD
🌽 🥗

INGREDIENTS :
1 medium beetroot, boiled, peeled, and grated

½ cup broccoli florets, boiled until just tender

½ cup sweet corn kernels, boiled

1 teaspoon garlic paste

1 tablespoon soy sauce

1 tablespoon extra virgin olive oil

Salt to taste

½ teaspoon freshly ground black pepper

1 tablespoon lemon juice

2 tablespoons fresh coriander leaves, finely chopped

METHOD:
Boil the beetroot, broccoli, and sweet corn separately until cooked.

Peel the beetroot and grate it.

Cut the broccoli into small bite-sized florets.

In a large mixing bowl, combine the grated beetroot, broccoli florets, and sweet corn.

Add garlic paste, soy sauce, olive oil, salt, black pepper, and lemon juice.

Toss everything gently until well mixed.

Add chopped coriander leaves and mix again.

Serve immediately, or chill for 15–20 minutes for a more refreshing taste.
