🥦MEXICAN BEETROOT BROCCOLI SALAD

INGREDIENTS :
1 medium beetroot, boiled, peeled, and grated
½ cup broccoli florets, boiled until just tender
½ cup sweet corn kernels, boiled
1 teaspoon garlic paste
1 tablespoon soy sauce
1 tablespoon extra virgin olive oil
Salt to taste
½ teaspoon freshly ground black pepper
1 tablespoon lemon juice
2 tablespoons fresh coriander leaves, finely chopped
METHOD:
Boil the beetroot, broccoli, and sweet corn separately until cooked.
Peel the beetroot and grate it.
Cut the broccoli into small bite-sized florets.
In a large mixing bowl, combine the grated beetroot, broccoli florets, and sweet corn.
Add garlic paste, soy sauce, olive oil, salt, black pepper, and lemon juice.
Toss everything gently until well mixed.
Add chopped coriander leaves and mix again.
Serve immediately, or chill for 15–20 minutes for a more refreshing taste.
