🌟Nilons Schezwan Soba Chicken Rice🌟

Ingredients
For Chicken Marination
200 g boneless chicken, diced
Salt to taste
¼ tsp turmeric powder
1 tsp red chilli powder
1 tsp oil
For Rice & Noodles
1 cup Rozana basmati rice (cooked until 90% done and cooled)
1 bowl soba noodles, boiled with salt and little oil for 3 minutes, cooked until 90% done, cooled, and lightly coated with oil
For Stir Fry
5 garlic cloves, finely chopped
½ tsp ginger, grated
4 green chilies, chopped
1 small onion, finely chopped
1 small carrot, julienned
1 handful shredded purple cabbage
1 handful yellow bell pepper, sliced
2 tbsp Nilons Schezwan chutney
1 tbsp tomato sauce
1 tbsp soya sauce
Salt to taste
Black pepper to taste
1.5 tbsp oil
Method of Preparation
Marinate the boneless chicken with salt, turmeric powder, red chilli powder, and 1 tsp oil. Rest for 10–15 minutes.
Cook the Rozana basmati rice until 90% done. Cool completely and keep aside.
Boil the soba noodles with salt and a little oil for 3 minutes until 90% cooked. Drain, cool completely, and lightly coat with oil to prevent sticking.
Heat 1.5 tbsp oil in a wok or pan.
Add finely chopped garlic, chopped green chilies followed by grated ginger and saute until aromatic.
Add finely chopped onion and saute until slightly brownish.
Add julienned carrot, shredded purple cabbage and sliced yellow bell pepper along with salt and black pepper. Stir fry on high flame while keeping the vegetables crunchy.
Add the marinated chicken and cook until tender. Add 🌟Nilons Schezwan chutney🌟 and cook well with the chicken.
Toss in the boiled soba noodles and mix evenly.
Add cooled Rozana basmati rice.
Add tomato sauce, soya sauce, and the remaining 🌟Nilons Schezwan chutney🌟
Mix everything well until evenly coated.
Let it cook on slow heat for some time to absorb all the flavours.
Switch off the flame and serve hot.
