Dark chocolate mousse Cake !

Ingredients
Cake Tin size 18 cm
Sponge mix

Yogurt Greek 154 grm
Water 114 grm
Eggs whole 80 grm
Vegetable oil 100 grm
Espresso coffee 42 ml

Dry ingredients
Plain flour 165 grm
Baking soda 12 grm
Cocoa powder 40 grm

Mix dry with wet ingredients bake at 180 for 35 to 49 minutes

For mousse topping
Egg yolk 50 grm
Milk skimmed 150 ml
Heavy cream 60 ml
White sugar 70 grm
Heat above ingredients in pan until temp reaches to 70 degree Celsius
Then add this mixture to 180 grm of dark chocolate 55% and gelatin 3 grm mix with 18 ml of water , At last add 375 grm of double cream blend it to smooth mixture put top of the sponge and refrigerate overnight next day slice it !

Butternut squash &Tomato soup !

Ingredients
Butternut squash 2 kg
Fresh tomatoes 1500 grm
Garlic 120 gram
Onion 347 gram
Carrot 500 grm
Salt 20 grm
Olive Oil 100 grm
Paprika 1/2tbsp
Black pepper 1/2 tbsp
Transfer everything in a tray then cook in oven for 40 minutes 200 degree Celsius
Add 4 tbsp of oil in pot , add 1/2 tbsp of paprika then cook veggie and 2 litre of vegetable stock cook for another 5 to 8 minutes blitz it and serve it !

Eggless Triple chocolate cake !

Ingredients
Milk 420ml
White vinegar 4 tbsp
Keep aside once curdle add
Oil 120 ml
1 tbsp of vanilla
Expresso coffee 30 ml
Dry ingredients
315 plain flour
Cocoa powder 52 gram
Baking powder 11/2 tsp
Baking soda 1/1/2 tsp
Pinch of salt
Caster sugar 270 gram

Mix gently dry ingredients with liquid and bake at 180 degree Celsius for 50 minutes

Ganache
360 ml cream heat the cream
Maple syrup 2 tbsp
Butter 90 gram
380 grm darl chocolate pour warm cream on top of it with butter mix well and keep aside

Whipped chocolate frosting
350 grm cream cheese
70 gram cocoa powder
145 grm sugar
1 tbsp of vanilla
300 ml whipping cream

Kadai chicken!

Chicken cube 344 gram

Onion and mix pepper diagonals cut 171 grm

For masala
5 tbsp of oil
Cumin seed 1 tsp
Onion chopped 162grm
Ginger 27 gram
Garlic 25 gram
Tomato chopped 214 gram
Turmeric 1 tsp
Chilli powder 1 tsp
Water 160 ml blend it to fine puree

Kadai masal

3gram cumin
6 gram coriander seed
4 gram fennel seed
3 dry red chilli
2 gram black pepper corn
2 cardamom
1 cinnamon small
Dry roast them and grind it

Honey chilli Caesar salad !

Ingredients
Baby gem lettuce 2 bulb
Caesar dressing
Bread croutons
Parmesan cheese

Honey chilli chicken
Chicken strips 1 breast 220 grm
1 egg
Garlic powder 1 tsp
Salt 1/2 tsp
Chili flakes 1/2 tsp
Corn flour 7 to 8 tbsp of coating

For sauce
Sriracha 4 tbsp
Honey 8 to tbsp p tbsp
Pinch of salt
1 tsp of chilli flakes

Rice pudding

Rice 200 gram washed soaked for 30 minutes
Milk 2 litres
Cardamom 3
Dry nuts toasted
20 gram cashew
20 gram almond
20 gram raisin

Condensed milk 250 gram
Kewra water 1 tbsp

Tofu Tikka Masala !

Ingredients
Tofu 200 grm cube cut marinate with

Yogurt 2 tbsp
Chilli powder 1tsp
Turmeric 1 tsp
Coriander powder 1tsp
Cumin 1 tsp
Smoked paprika 1 tsp
Salt 1 tsp
Dry fenugreek 1 tbsp
Oil 2 tbsp
Garam masala powder tsp

Mix well cook in oven 189 for 10 to 15 minutes
For masala
Oil 4 tbsp in a pan once hot add whole spices
1 cinnamon stick ,2 cardamom, 3 cloves , 1 tbsp of cumin once crackled add
Onion chopped 220 gram cooked until lightly brown add
Tomato chopped 240 grm
Ginger garlic 1 tsp
Sauté for couple of minutes add dry spices
1 tsp of turmeric , 1 tsp of chilli powder, tsp of paprika , 1 tsp of cumin powder , 1 tsp of coriander , 1 tsp of garam masala , 1 tbsp of dry fenugreek , 1 tsp of salt mix well then add cream 100 ml , 200 ml of water stir it finish with fresh coriander , and fresh chillies serve it !

Cod with pea puree , black beans & sweet potato !

Green pea puree
Spinach 100 gram
Green pea 200 grm
Shallots 2 chopped
Garlic cloves 4 chopped
Butter 1 tbsp

Blanch spinach and peas , then transfer to cold water
In separate pan add butter shallots and garlic cook for few minutes then add to blanched spinach and pea grind to fine paste add add 1/2 tsp of xantham gum salt and pepper adjust according to your taste .

Sweet potato peeled and roasted , with fresh herbs thyme seasoned with salt pepper and oil

Black beans cooked in vegetable stock until soft

Cod fish seasoned and cooked in oven for 8 to 10 minutes for 180

Crispy chicken sushi roll !

Rice 303 grm
Water 330 gram
Cooked on flattop then cool it down

Seasoning liquid

Rice vinegar 100 ml
Sugar 50 grm
Salt 5 grm
Boil it then put in cooked rice

Soda water for batter 200 ml
Flour 80 gram
Corn starch 100 gram
Salt and pepper a pinch of

Chicken strips drenched in corn starch then in above mixture and fry it !

Sriracha mayo for toppings
Kewpie mayo 4 tbsp
Sriracha 2 tbsp

Chicken Korma !

Ingredients

Chicken breast cube 339 grm

For gravy
Oil 25 grm
Cinnamon 1
Bay leaves 2
Mace 1
Black cardamom 1
Green cardamom 4
Cloves 4
Fennel seed 1/2 tsp
Cumin 1 tsp
Black pepper corn 5
Once above spices crackled add
Onion 238 grm
Cook until brown then add ginger garlic 1 tbsp , 8 cashew , 8 almond , 2 chilli and
Tomato 119 grm cook for another 4 to 5 minutes then transfer to blender add 2 tbsp of yoghurt blitz it add little bit of water if required , and blitz it

In same pan add chicken cubes ,
1 tsp of chilli powder
1 tsp of turmeric
1 tsp of coriander powder
1 tsp of cumin powder
1 tsp of salt mix well add blended gravy to it along with little water cook on low heat , in separate pan take 1 tbsp of butter , add 1 tbsp of paprika ,1 tbsp of dry fenugreek to it once it releases the colour , put in chicken and mix well finish with pinch of salt , pinch of sugar , fresh coriander 5 sprigs chopped , ginger julienne 1 small piece, 1 cube of butter sprinkle of garam masala and drizzle of cream and serve it
