Khatta Meetha Chatpata Sindhi Aam Murabba 🥭
Ingredients
* 2 raw mangoes, peeled and cut into slices
* 1½–2 cups sugar (adjust according to the sourness of the mangoes)
* 8–10 whole black peppercorns
* 4–5 whole green cardamoms
* A few strands of saffron (kesar)
* 10–12 cashews
* 10–12 almonds, sliced
* ¼ tsp salt
* ¼ tsp black salt (kala namak)
* ½ tsp Kashmiri red chilli powder (or as per taste)
Method
1. Peel and slice the raw mangoes.
2. Mix the mango slices with sugar and keep covered for about 3 hours. The sugar will draw out the natural juices from the mangoes.
3. Place the mixture on low to medium heat and cook. Do not add water.
4. As the sugar melts, the mangoes will release more juice and form a natural syrup.
5. Add whole black peppercorns, whole green cardamoms, saffron strands, cashews, and almonds.
6. Continue cooking until the syrup becomes thick, glossy, and coats the mango slices well.
7. Add salt, black salt, and Kashmiri red chilli powder. Adjust the seasoning according to your preferred sweet, tangy, and spicy balance.
8. Cook for another 2–3 minutes and switch off the heat.
9. Allow the murabba to cool completely before storing it in a clean glass jar.
Tip
The murabba tastes even better after a day or two, once the flavors of the pepper, cardamom, saffron, and spices have infused into the mango slices.
