Healthy chicken salad is a balanced meal that provides protein, fiber, and various nutrients from the vegetables. It is a versatile recipe, so anyone can make their alterations. Here is the recipe that we love, as it is healthy, filling and very tasty.
Ingredients (Serves 2) :
For the Chicken:
300gm boneless, skinless chicken breasts
Salt and pepper to taste
For the Salad:
- 1 medium sized Carrot
- 1/2 a medium sized Capsicum
- 1 medium sized Onion
- 10 to 12 baby Tomatoes
- 2 Celery sticks
- 2 to 4 Spring onion sticks
- 150 gms of Lettuce
- Coriander leaves
For the Dressing:
-Mayonnaise 2/3 Cup (80 gm)
-Curd 1/3 Cup (50 gms)
-American Mustard 1 Tablespoon (15 ml)
-Black Pepper 1/2 Teaspoon (2.50 gms)
-Salt
-Mixed Herbs 2 Teaspoon (10 gms)
(oregano, rosemary, thyme, basil, parsley)
-Dried Garlic Bread Seasoning 1/2 Teaspoon (2.5 gms)
-Chili Flakes 1 Teaspoon (5 gms)
-Virgin Olive Oil 1/2 Tablespoon (7.5 ml)
Instructions:
Prep the Chicken:
-Boil and shred 300gm of boneless chicken
Make the Dressing:
In a small bowl, whisk together the Mayonnaise, Curd, American Mustard, Black Pepper, Salt, Mixed Herbs, Garlic Bread Seasoning, Chili Flakes and Virgin Olive Oil.
Assemble the Salad:
Add the shredded chicken to the salad dressing with all the vegetables. Toss everything together gently until the salad is evenly coated with the dressing. Garnish it with freshly chopped coriander.
Serve:
Divide the salad into individual plates or bowls. You can a pinch of lemon juice, if desired. Enjoy!
