I am a researcher by profession, a teacher by spirit and a student at heart. When I am not doing either of these, I read and talk about food. This page is my personal journal for documenting my gastronomic experiences. The Gut Filling is here to tantalize all your senses about food. It aims to explore the different avenues of culinary discourse emerging and evolving over time around the globe. I am sure this will make your ‘gut feeling’ even more passionate about ‘filling’ up your gut!

Things my Pishi cooked for us when we visited DC -

💚 Bhaat
💚 Daal
💚 Paneer-er Torkari
💚 Tandoori Pomfret
💚 Chingri Malaikari
💚 Mutton Curry
💚 Gajorer Haluya

There’s a certain style of cooking that’s typical of the households who migrated from the other side of Bengal, and settled in the refugee colonies of South Kolkata. Visiting my aunt in DC, and getting to relish the nostalgia of home is truly special indeed! 🫶🏼

Not to sound cocky or anything, but I think my most favorite food are always the ones prepared by me or my husband. It’s not like we’re the best chefs or anything. We didn’t go to culinary school, neither do we have degrees related to that. But when you taste the food made by your own hands, the taste of your own labor is extra sweet! 😋

We both love cooking! Every time we make something, especially when we curate something from scratch, we try to keep one thing in mind – the flavor notes should be synchronous. The salt, fat, acid, heat, the umami, the sweetness, the bitterness – everything should fall in symphony with each other. 😍

Related to this little boy’s audio so hard. This is usually how I reminisce my fond food memories. Sharing a few glimpse of the flavor profiles and I have created in our kitchen, over the years! 🤤

Before we moved to Houston, we didn’t know that it was one of the most underrated food cities in US. But when we got to know that it was the most diverse city in America in terms of population, it totally made sense! We always wished there were a Michelin guide for this city. When the Michelin Guide for Texas came out in November 2024, and I decided to eat our way through the Houston guide. 💃🏻

There are 44 restaurants in the guide as of 2025, and we’ve been to 31 of them. Thanks to the guide, we came to know about some of the hidden gems in our neighborhood or in a suburb in the farthest corner of the city, that we wouldn’t have known otherwise! 🙌🏼

is one such place! Went there last summer, and it took me a whole month to find a reservation! The food is Mexican, with inspiration from global cuisines. Chef Thomas Bille’s vision and creativity goes next level at this humble joint, where each dish takes you on a journey with a wow factor! 😇

We had –

🩵 Tuna Tostada
💚 Chicharrones Salad
💛 Street Corn Agnolotti
🧡 Roasted Duck with Cherry Mole and Heirloom Corn Tortillas
❤️ Panna Cotta
🤎 Tres Leches

Each of these dishes were fantastic! I am obsessed with corn. So, the Agnolotti has a special place in my heart. But the Cherry Mole Sauce just blew me away in the most unassuming way. My husband, who is not much of a sweet tooth is obsessed with Tres Leches, and he was a fan of it! But my award goes to the Panna Cotta! 😍

Can’t wait to be back here, only if I could snag a reservation that easily! 😝

💛 When it comes to our food in the US, we, the Kolkata Bangalis are at the brunt of it. The umbrella of Indian food usually caters a very Americanized Punjabi or Telugu cuisine. Being half-Telugu, I don’t mind that much; but when you see the price vs the quality of the food served, you will miss home even more, especially the fantastic cooking of your aunts. And if we try to fit under Bangali cuisine, it is so dominated by Bangladeshi cuisine, that the Bangali food of Kolkata hardly gets any exposure.

💛 It’s not all bleak and dark. There are a couple food trucks and small joints on both the coasts, and one very famous restaurant in NYC focusing on Kolkata food, but in the middle, there’s none. Nada.

💛 After the years of waiting, and having lived in four states, I can finally proudly say, we have a Kolkata style food joint in the city we live in, where we can indulge in the fish fries and rolls and koraishnutir kochuri!

💛 Yes, Jhimli’s Kitchen - Hangla opened recently in the Katy suburbs of Houston at a food truck park called El Patio at Mason. I’ve been following them with a hawk’s eye ever since they put out their first advertisement. They’re amateurs, tech professionals by day doing this out of passion. This is their fourth week, and they have a long way to go.

💛 I’ve been to their place for three consecutive weeks. The menu keeps rotating, and they post it on their WhatsApp group every week. What I’ve there are -

👉🏼 Kathi Rolls: This is my favorite item from their place. The filling is very good, so are the Porotas. Very crispy and nice! Reminded me of Podo-r Dokaan-er Roll from the para I grew up in. You know a place made it good when they’re able to create a childhood memory.
👉🏼 Fish Fry: This was also pretty good when I had it last time. For $7.99, the portion size is pretty commendable.
👉🏼 Luchi-Chholar Daal-Kosha Mangsho: This was okayish. The Luchi became a little khasta, but I’ll give them that.
👉🏼 Korashnuti-r Kochuri & Aloor Dum (not in pic): This, rather, was fantastic. I’ll go back every week they make this.

💛 All being said, here’s a few things I would keep a few things in mind before I visit the place. The joint is fairly new, and the owners are very new to the industry. So, please be patient when you visit. It takes time to deliver, but they’re trying their best to keep their clientele satisfied. They’re open from Thurs-Sun, so all the Kolkata Bangalis, show up to their joints, beaming with enthusiasm, and trying to get a taste of home. Being new as a joint, and also in the industry, they still need to figure out better ways of their ordering system and a lot of the logistics. Sometimes, if you aren’t satisfied with their food, it’s not a reflection of their cooking, but a result of stress amidst mismanagement. Hence I’d really like to give them a few more weeks (or even months), so that they can shun their skills, and serve us the best of what the India’s best food city can offer. I mean it from the bottom of my heart when I say this - I really really want them to succeed! 🙌❤️😍
