Prawns in Orange Sauce...
Marinate prawns for a couple of hours in orange juice, minced garlic, chili flakes, chopped parsley, pinch of salt.
Add a k**b of butter to your pan and once it melts, sautee the prawns ( minus the marinade) for a minute or two till they just change colour. (Using some fish/prawn stock makes this step redundant). Remove.
In the same pan add the reserved marinade, more orange juice, salt and a squeeze of lemon and stock if you are using it. (I didn't ). Adding fresh orange slices/segments at this stage is a great idea ( again, I didn't as I forgot to reserve any ). Simmer over a very low flame till the sauce thickens a bit. Add prawns, some freshly chopped parsley and cook till prawns are done.
Spoon over plain steamed/boiled rice 😊
Sauce is a thin, soupy in consistency but very light and refreshing!
