Here's a simple recipe for making delicious chicken biryani:
Ingredients:
500g Basmati rice
500g chicken (bone-in or boneless)
2 onions (thinly sliced)
2 tomatoes (chopped)
1/2 cup yogurt
2-3 green chilies (slit)
1 tablespoon ginger-garlic paste
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon garam masala
1 teaspoon cumin seeds
1 cinnamon stick
3-4 cloves
2-3 cardamom pods
1 bay leaf
A handful of chopped cilantro (coriander) and mint leaves
4 cups water
Salt (to taste)
4 tablespoons oil or ghee
A pinch of saffron (optional)
2 tablespoons milk (optional)
Instructions:
Step 1: Prepare the Rice
1. Rinse the basmati rice and soak it in water for 30 minutes.
2. Boil 4 cups of water with a little salt and cook the rice until 70% done (rice should be firm, not fully cooked). Drain and set aside.
Step 2: Cook the Chicken
1. Heat 2 tablespoons of oil or ghee in a large pan or pot.
2. Add cumin seeds, cinnamon, cloves, cardamom, and bay leaf. Fry for a few seconds until fragrant.
3. Add the sliced onions and sauté until golden brown.
4. Add ginger-garlic paste and green chilies, and cook for a minute.
5. Add chopped tomatoes and cook until they soften.
6. Add the chicken pieces, turmeric powder, red chili powder, and salt. Stir well and cook until the chicken is browned.
7. Add yogurt, chopped cilantro, and mint leaves. Mix and cook for 10-15 minutes until the chicken is cooked through.
Step 3: Layer the Biryani
1. In a separate pot, spread a layer of partially cooked rice at the bottom.
2. Add a layer of the cooked chicken mixture on top of the rice.
3. Repeat the layers, finishing with a final layer of rice on top.
4. (Optional) Dissolve a pinch of saffron in warm milk and drizzle over the top layer of rice.
Step 4: Cook on Low Heat (Dum)
1. Cover the pot tightly with a lid.
2. Cook on low heat for 15-20 minutes to allow the flavors to meld together.
3. Once done, gently fluff the rice and mix everything together.
Serve the chicken biryani hot with raita or a side salad!
