Kerala Style Nadan Crispy Ulli Vada Recipe π§

In this video, Iβm sharing how to make authentic Kerala-style super crispy ulli vada, perfect for evening tea time β.
Ingredients Used
Onion β 7 (thinly sliced)
Green chillies β 5 (finely chopped)
Ginger β 2 small pieces (finely chopped)
Curry leaves β few (chopped)
Maida β little
Soda powder β a pinch
Rice flour / Idiyappam podi β little (for extra crispiness)
Red chilli powder β little
Turmeric powder β a pinch
Salt β to taste
Oil β for deep frying
Method
First, thinly slice the onions. Finely chop ginger, green chillies, and curry leaves.
Add all these into a bowl with salt, and mix well using your hands.
After mixing, add a small amount of maida and a pinch of soda powder.
Mix well again, then add rice flour / idiyappam podi to make the vada extra crispy.
Next, add red chilli powder and turmeric powder, mix everything well, and let the mixture rest for 30 minutes.
Heat oil in a pan or traditional chinachetty on medium flame.
Wet your hands lightly, take small portions of the mixture, shape them, and gently drop into hot oil.
Fry until golden brown and crispy. Remove and drain excess oil.
Serve hot with a cup of strong tea βπ
