Kerala Style Nadan Crispy Ulli Vada Recipe πŸ§…πŸ”₯

In this video, I’m sharing how to make authentic Kerala-style super crispy ulli vada, perfect for evening tea time β˜•.

Ingredients Used

Onion – 7 (thinly sliced)

Green chillies – 5 (finely chopped)

Ginger – 2 small pieces (finely chopped)

Curry leaves – few (chopped)

Maida – little

Soda powder – a pinch

Rice flour / Idiyappam podi – little (for extra crispiness)

Red chilli powder – little

Turmeric powder – a pinch

Salt – to taste

Oil – for deep frying

Method

First, thinly slice the onions. Finely chop ginger, green chillies, and curry leaves.
Add all these into a bowl with salt, and mix well using your hands.

After mixing, add a small amount of maida and a pinch of soda powder.
Mix well again, then add rice flour / idiyappam podi to make the vada extra crispy.

Next, add red chilli powder and turmeric powder, mix everything well, and let the mixture rest for 30 minutes.

Heat oil in a pan or traditional chinachetty on medium flame.
Wet your hands lightly, take small portions of the mixture, shape them, and gently drop into hot oil.

Fry until golden brown and crispy. Remove and drain excess oil.

Serve hot with a cup of strong tea β˜•πŸ˜‹

Kakka Erachi (Clams Meat) – Home Preparation Process
2️⃣ Basic Marination
Mix:

Kakka erachi – 1 cup(purchase only fresh kakkaerachi, Wash kakka well with salt + turmeric. Boil until shells open (if using shell clams). Remove meat and wash again.))

Turmeric powder – ΒΌ tsp

Kashmiri chilli powder – Β½ tsp

Crushed pepper – Β½ tsp

Salt – a little

A few drops of coconut oil

Marinate for 10–15 minutes.

3️⃣ Cooking the Meat

Add the marinated kakka to a pan.

Pour 2–3 tbsp water only (clams release their own water).

Cover and cook for 5–7 minutes on low flame.

Once cooked, keep aside.

πŸ₯₯ 4️⃣ Making the Kerala-Style Masala

Heat coconut oil β†’ add:

Temper:

Mustard seeds

Curry leaves

Chopped shallots (3–4)

Crushed garlic (4 pods)

1 green chilli

SautΓ© until golden.

Add spices:

Turmeric – ΒΌ tsp

Chilli powder – Β½ to 1 tsp

Coriander powder – ΒΎ tsp

Pepper powder – Β½ tsp

Garam masala – ΒΌ tsp (optional)

Roast the spices until the oil separates.

5️⃣ Add Kakka & Combine

Add cooked kakka meat to the masala.

Mix well on medium flame.

Add 2–3 tbsp fresh grated coconut (optional but traditional).

Drizzle a bit of coconut oil + curry leaves for aroma.

Cook until dry-roast consistency.
