Here's a recipe for Corn Cheese Kofta that serves 4:
Kofta:
Ingredients:
- 1 cup corn kernels
- 1/2 cup grated cheese (processed)
- 4 medium sized boiled potatoes
- 1/2 cup breadcrumbs
- 1/4 cup chopped coriander
- 1/2 teaspoon garam masala
- 1/2 teaspoon cumin powder
- 1/4 teaspoon red chilli powder(optional)
- Salt, to taste
- 2 tablespoons cornflour powder
- Oil, for frying
Tomato and Onion Gravy:
Ingredients:
- 2 large onions, chopped
- 2 large tomatoes, pureed
- 2 cloves garlic, minced
- 1 tablespoon ginger paste
- 1 tablespoon tomato puree
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric
- 1/2 teaspoon red chili powder
- Salt, to taste
- 2 tablespoons butter or oil
- Fresh coriander, for garnish
Instructions:
1. Prepare the koftas:
- Boil or steam the corn kernels until tender. Mash them coarsely.
- Mix the mashed corn with cheese, breadcrumbs, potatoes, coriander, garam masala, cumin powder, red chilli powder(if using), and salt.
- Divide the mixture into 8-10 portions and shape each into a ball.
- Dip each kofta in cornflour powder, and fry until golden brown.
2. Prepare the gravy:
- Heat butter or oil in a pan. Add cumin seeds and let them sizzle.
- Add chopped onions and sauté until golden brown.
- Add garlic, ginger paste, and sauté for a minute.
- Add tomato puree, coriander powder, turmeric, red chili powder, and salt. Mix well.
- Add 1 cup water and bring to a simmer.
3. Assemble and serve:
- Add the fried koftas to the gravy and simmer for 5-7 minutes.
- Garnish with fresh coriander and serve with lachcha paratha or rice.
