# Perfect Dosa Batter (Hotel-Style)

# # One Batter for Crispy Dosa, Soft Idli & Fluffy Uttapam

This foolproof dosa batter recipe gives you crispy golden dosas, soft idlis, fluffy uttapams, and delicious paniyarams from a single batch. With the perfect rice-to-urad ratio and proper fermentation, you'll get authentic South Indian results every time.

━━━━━━━━━━━━━━━━━━━━
🛒 Ingredients
━━━━━━━━━━━━━━━━━━━━

# # # For the Rice

• Idli Rice – 2 Cups (400 g)

• Regular Rice – 1 Cup (200 g)

• Thick Poha – ½ Cup

# # # For the Dal

• Whole White Urad Dal – 1 Cup

• Fenugreek Seeds – 1 tsp

# # # Other Ingredients

• Salt – 1½ tsp (Add after fermentation)

• Cold Water – As Required

━━━━━━━━━━━━━━━━━━━━
👨‍🍳 Method
━━━━━━━━━━━━━━━━━━━━

# # # Step 1 – Soak

Wash the urad dal and fenugreek seeds thoroughly and soak together for **4–6 hours**.

Wash the rice and poha separately and soak for **4–6 hours**.

💡 Tip:
During summer, 4–5 hours is enough. In winter, soak for 6 hours.

━━━━━━━━━━━━━━━━━━━━

# # # Step 2 – Grind the Dal

Grind the soaked urad dal and fenugreek seeds with very little water until light, smooth, and fluffy.

💡 Tip:
Add water gradually while grinding to incorporate more air, resulting in softer idlis.

━━━━━━━━━━━━━━━━━━━━

# # # Step 3 – Grind the Rice

Grind the soaked rice and poha to a slightly coarse texture.

💡 Tip:
Do not grind completely smooth. A slightly coarse batter produces crispier dosas.

━━━━━━━━━━━━━━━━━━━━

# # # Step 4 – Mix

Combine both batters in a large bowl.

Mix thoroughly using your hand for **2–3 minutes**.

💡 Tip:
Mixing by hand encourages natural fermentation and improves batter quality.

━━━━━━━━━━━━━━━━━━━━

# # # Step 5 – Ferment

Leave enough space in the bowl for the batter to rise.

Cover loosely and ferment for **8–12 hours** in a warm place.

💡 Tip:
The batter is ready when it doubles in volume, develops tiny air bubbles, and has a mild sour aroma.

━━━━━━━━━━━━━━━━━━━━

# # # Step 6 – Add Salt

After fermentation, add salt and mix gently.

Avoid over-mixing to preserve the trapped air.

━━━━━━━━━━━━━━━━━━━━

# # # Step 7 – Adjust for Dosa

If the batter is too thick, add **2–3 tbsp water** to achieve a smooth, pourable consistency.

━━━━━━━━━━━━━━━━━━━━

# # # Step 8 – Use

Use the same batter to make:

✔ Crispy Plain Dosa

✔ Masala Dosa

✔ Soft Idli

✔ Uttapam

✔ Paniyaram

━━━━━━━━━━━━━━━━━━━━
💡 Pro Tips
━━━━━━━━━━━━━━━━━━━━

✔ The ideal ratio is **3:1 (Rice : Urad Dal)**.

✔ Fenugreek seeds improve fermentation, flavor, and color.
