Delicious Vegetarian Dinner

1) Stewed Cabbage (Braised Cabbage)
In a pot, heat a little oil over medium heat. Add chopped onion, chopped carrot, one shredded tomato, and 3 cloves of garlic. Sauté for about 5 minutes until fragrant.
Add the chopped cabbage, mix well, and cover the pot.
Reduce the heat and let it stew for 30–40 minutes, stirring occasionally, until soft and flavorful.

2) Fried Tofu (Crispy & Flavorful)

Ingredients:

Tofu, cut into bite-sized pieces
Flour
Salt
Black pepper
Garlic powder
Paprika
Oil (for frying)
Soy sauce
Maple syrup
Sesame seeds (for garnish)

Instructions:

Cut into bite-sized pieces.
In a bowl, mix flour, salt, black pepper, garlic powder, and paprika.
Coat the tofu evenly in the mixture.
Heat a pan over medium heat and add oil, soy sauce, and maple syrup.
Add tofu and fry for about 3 minutes, stirring occasionally, until golden and crispy.
Sprinkle with sesame seeds and serve warm.

3) Fresh Salad 🥗
Serve with your favorite fresh salad on the side for a light and refreshing balance.

Happy Passover! My first time making Gefilte Fish myself, following my mom’s recipe that comes from my grandma.

Homemade Gefilte Fish (White Carp Recipe)
A traditional family recipe:🤍

Ingredients:
2–2.5 lbs white carp (cleaned & filleted; reserve head and bones for broth)
2 medium onions + 2–3 onions (fried)
(Save onion skins for broth—they give a beautiful golden color)
2 medium carrots
2 medium beets
2eggs
3–4 tbsp matzo meal (pre-moistened)
1–2 tsp salt (to taste)
½–1 tsp black pepper
Cold water (enough to cover fish)
Oil (for frying onions)

Step 1: Prepare the Fish

Wash the fish thoroughly.
Cut into ~1.5-inch pieces.
Slice each piece in half lengthwise and remove the center bone (reserve bones for broth).
Carefully separate the fillet from the skin.

Tip: Keep the skin and large bones—you’ll use them to shape and wrap the fish later.

Step 2: Prepare the Fish Mixture

Fry 2–3 onions until golden brown.
Grind the white carp fillets (2–3 times to ensure no small bones remain).
Add to the processor:
Raw onions
Fried onions
Eggs
Pre-moistened matzo meal
Salt & pepper
Mix until smooth, but not too dense.

Step 3: Prepare the Pot (Layering)
Layer the following in a large pot:

Onion skins (for golden color)
Fish head and bones
Carrots (cut into chunks)
Beets (cut into chunks)

Step 4: Shape the Gefilte Fish
Wet your hands.

Form oval-shaped fish portions from the mixture.
Place each portion onto a fish bone and wrap with the reserved skin.
Gently arrange the stuffed fish pieces on top of the layered vegetables and bones.

Step 5: Cook

Add cold water just to cover the fish.
Bring to a gentle boil (do not let it boil aggressively).
Skim off any foam.
Season with salt and black pepper to taste.
Cover and simmer on low heat for 1.5–2 hours.

Step 6: Cool & Serve

Let the fish cool completely in the broth for the best flavor.
Carefully transfer to a serving dish.
Refrigerate until the broth sets into a light gel.

Serve cold with:

Carrot slices

Jellied broth

Horseradish (classic & essential!)
