Paneer Tikka 🥪 🥪 Sandwich

Ingredients

For Paneer Tikka Filling
Paneer 200 g cut in small cubes
Onion 1 small sliced
Sweet bell peppers 4 small sliced
Hung curd 2 tbsp
Lemon juice 1 tsp
Ginger–garlic paste 1 tsp
Chilli, coriander and mint paste 1 tbsp
Red chilli powder 1 tsp
Coriander powder 1 tsp
Crushed Kasturi methi 1 tsp
Haldi 1/2 tsp
Roasted jeera powder 1 tsp
Chaat masala 1/2 tsp
Salt to taste
Olive oil 1 tbsp

For Sandwich
Bread slices 6 to 8
Butter as needed
Mint coriander chutney
Tomato sauce optional
Cheese slice
Grated mozzarella cheese optional

Instructions

Prepare the Paneer Tikka
Mix hung curd, chilli paste, lemon juice, chilli powder, haldi, roasted jeera powder, chaat masala, ginger–garlic paste, salt and olive oil.

Add paneer, onion and sweet bell peppers. Coat well and marinate for 15 to 30 minutes.

Cook the mixture on a hot pan for 5 to 7 minutes until the masala dries and the paneer becomes lightly roasted.

For a smoky flavour, place a small piece of hot coal in a bowl, add a little ghee, cover and smoke the filling for 5 minutes. (Optional)

Assemble the Sandwich

Spread butter on both sides of the bread.
Apply mint coriander chutney and tomato sauce if you like.

Place a generous layer of the paneer tikka filling.

Add a cheese slice for a cheesy flavour.

Add grated mozzarella if you prefer it extra cheesy.(optional)

Cover with another bread slice.

Grill or Toast

Grill in a sandwich maker or toast on a pan until golden and crisp with a light brush of butter.

Shahi Chaach (Mughal Era Inspired)

This Shahi Chaach gets its perfect winter warmth from a little kesar.

A royal, aromatic, cooling yet lightly warming chaach — just like the refreshing drinks served in Mughal kitchens.

Ingredients (2 glasses)
• 1 cup curd (dahi)
• 1½ to 2 cups cold water
• 6–8 strands kesar (saffron) soaked in 1 tbsp rose water (gulab jal)
• 6–8 fresh mint (pudina) leaves, lightly torn
• Buddharatna Himalayan Heeng–Jeera Salt — to taste
• Optional:
• A pinch roasted jeera powder
• Dried rose petals for garnish

✨ Method

1. Whisk the Curd

In a bowl, whisk the curd until smooth and creamy.

2. Add Water

Pour in cold water gradually and whisk again until the chaach becomes light and frothy — the Mughal way.

3. Add Kesar & Rose Water

Add the saffron-infused water and rose water.
Kesar gives a gentle natural warmth; rose adds a delicate royal fragrance.

4. Add Pudina

Tear the mint leaves by hand and drop them in.
(Hand-torn mint releases oils more naturally.)

5. Season

Add Buddharatna Himalayan Heeng–Jeera Salt to taste.
This gives the chaach:
• warmth from roasted jeera
• digestive support from heeng
• a balanced mineral taste from Himalayan salt

6. Rest & Serve

Let it rest for 5 minutes so the flavours open up.
Pour into glasses and garnish with a kesar strand or rose petal.

🌿 Chef Bilkis Tip

For an even more royal taste, chill the chaach for 10 minutes before serving. The kesar and mint sharpen beautifully.

Dal Badami – Mughlai Lentil & Almond Curry

Ingredients (Serves 4

Tur Dal – 1 cup
Almonds (soaked & peeled) – 15-20
Ghee – 3 tbsp
Onion (finely chopped) – 1 medium
Ginger-garlic paste – 1 tsp
Green chilies (slit) – 2
Saffron strands – 8-10 (soaked in 2 tbsp warm milk)
Cardamom powder – ½ tsp
Cinnamon stick – 1 small piece
Cloves – 2
Bay leaf – 1
Salt – to taste
Warm water – as needed
Fresh coriander – for garnish

Preparation Steps

Heat oil and add the chopped onions and sauté till golden brown. Stir in ginger-garlic paste and green chilies, cook till the raw smell disappears.

Add the daal and Saute it, Add the soaked dal, Saute for 3 4 min then keep stirring gently.

Pour in some saffron-infused milk and Saute it

Make stock water with the whole ingredients, and noon

Now for tadka heat ghee add stock water mix in the daal Dal Badami –

Garnish with chopped green chillies and chopped coriander

Serving Suggestions

Serve Dal Badami hot with Sheermal or Taftan bread for Mughlai authenticity, saffron pulao or jeera rice for a royal meal, and a side of fresh salad or papad for crunch 👩‍🍳 👩‍🍳

I had the incredible opportunity to be part of The Usha Slurrp Great Indian Cookout Season 4, co-presented by Aashirvaad and what an experience it was!

As a chef, being amidst some of India’s most passionate food enthusiasts and culinary masters felt truly inspiring. The event was a beautiful celebration of flavours, innovation, and creativity, powered by iconic brands like Usha and Aashirvaad.

We witnessed amazing masterclasses by the talented Neha Deepak Shah, Amrita Raichand, and Akanksha Sehgal each sharing their unique approach to cooking with flair and finesse.

From over 8800+ participants, 12 exceptional home chefs were selected, and the top 3 finalists battled it out in the semi-finals and grand finale with their innovative, mouth-watering creations.

It was an absolute delight to be part of this vibrant culinary celebration full of food, fun, and inspiration. Already excited for the next season!
