Mint Coriander Chutney:
A fresh, tangy Indian green chutney perfect with samosas, sandwiches, or chaat
INGREDIENTS
• 1 cups fresh mint leaves, packed
• 2 cups fresh coriander (cilantro) leaves, packed
• 2 green chilies
• 2 garlic cloves
• 1 teaspoons ginger, roughly chopped
• 2 tablespoons roasted chana dal (split chickpeas)
• 1 medium lemon, juiced
• 0.8 teaspoons salt
• 0.5 teaspoons sugar
• 3 tablespoons cold water, as needed
STEPS
1. Wash the herbs: Rinse 1 cups fresh mint leaves, packed and 2 cups fresh coriander (cilantro) leaves, packed thoroughly under cold water to remove any grit, then shake off excess water.
2. Combine ingredients: Add the mint, coriander, 2 green chilies, 2 garlic cloves, 1 teaspoons ginger, roughly chopped, 2 tablespoons roasted chana dal (split chickpeas), 0.8 teaspoons salt, and 0.5 teaspoons sugar to a blender jar.
3. Blend to a paste: Add 3 tablespoons cold water, as needed a little at a time and blend until you get a smooth, thick paste, scraping down the sides as needed.
4. Add lemon juice: Add 1 medium lemon, juiced and pulse briefly to combine. Taste and adjust salt or lemon as needed.
5. Serve: Transfer to a bowl and serve immediately with snacks, or refrigerate in an airtight container.
NOTES
Roasted chana dal gives the chutney body and helps it stay fresh longer without turning watery.
