अरबी की सब्जी | Arbi Masala Sabji | Arbi ki Sookhi Sabzi | Arbi Masala Dry | Arbi ki Sukhi Sabji
Arbi ki sookhi sabzi is a simple, homestyle Indian dish made from arbi (taro root) that’s boiled, sliced, and lightly pan-fried with spices until crisp on the outside and soft inside. It’s popular in North Indian kitchens and often paired with roti or dal.
The sabzi has a slightly crisp, golden exterior with a soft, creamy texture inside. The flavor is warm and comforting - typically seasoned with turmeric, red chili powder, coriander powder and amchur (dry mango powder) or a squeeze of lemon for a tangy kick. Some versions also include ajwain (carom seeds), which adds a subtle earthy aroma and helps digestion.
It’s called “sookhi” because it’s dry (no gravy), making it perfect for tiffins or travel meals. Despite its simplicity, the dish stands out for its balanced spice, slight crispiness, and earthy taste of arbi.
Overall, it’s a comforting, mildly spicy, and slightly tangy stir-fry that’s both satisfying and easy to make.
Ingredients:
Mustard oil
400 grams arbi
1/2 tsp asafoetida/hing
1 tsp cumin seeds/jeera
1 tsp caorm seeds/ajwain
Finely chopped ginger
Roughly chopped onion
5-6 crushed grlic cloves
2 tsp coriander powder
1 tsp red chilli powder
1/2 tsp turmeric powder
Salt to taste
1 tsp dry mango powder
4 thinly sliced green chillies
Coriander
Lemon juice
