What if prawn toast got drunk in Goa?
(When thinking of food I ask myself these things more often than I should. 🙈🙈)

I love prawn toast - crisp, juicy, golden. It’s perfect. But for .goa ’s small plates menu, I wanted it wild. Shameless. Naughty. With a side of Goan swing.

Usually, the prawn farce is delicate - juicy and delicate in flavour. But I gave it some muscle: creamy coconut, a hit of funk, a flicker of heat. Fried till absurdly crisp, but still juicy inside. Then came the chaos.

Sticky-spicy-sweet raw mango balchão. A drizzle of garlic-coriander fish sauce syrup. Pol sambol-style coconut rained over the top. Curly scallions for drama.

Hot. Tangy. Sweet. Beachy. Bad behaviour, bite-sized.

I love the convenience of delivery apps, but god, I love me some “marketing” in the markets.

Today, while picking some bhindi, a sweet-looking lady leans over—out of nowhere—to tell me how kind the gentleman vendor is. Wow! I ended up getting more bhindi than I needed.

At the dhaniya-pudhina cart, a “bhabhi” swooped in, haggled on my behalf, and scored me a bunch of fresh desi dhaniya (‘iske patte chotte hote hai’). Then, like Mary Poppins, she vanishes, a chorus of “bhabhi, bhabhi, bhabhi” trailing her down the street.

Then, a posh lady rushes up, grabs pudhina, sniffs deeply, and sighs, “yeh itna kadva kyon hai?” I’m speechless.

The vibes were off the charts today. And the veggies…

And no, there’s no “marketing” at ‘Organic’ farmers markets.

Seeing .goa come alive has been an absolute wild fun ride. It’s more than a bar—it’s a house party where the breeze never stops. Putting the menu together with , , and has been pure naughty play. We took the foods we love, messed around with it, and sprinkled in some Goa-magic. And now our playful menu and Pankaj and Nakul’s phenomenal cocktails and beers have an address, in the heart of Siolim.
