Hey all. Hope you had blast on Diwali🥳✨💥. I know I did, even without crackers or any dairy! 😊 Here's an easy vegan nankhatai (shortbread cookies) recipe for you this Diwali-
Make a dough from 1 cup flour, 1/2 cup chickpea flour, 1/2 cup ground sugar and 2 tbsp rawa or semolina flour and 1 tsp of baking powder. Add in 8 tbsp of softened butter (I used .mylk butter). You can also sub this with ghee (try vegan ghee). Add 1-2 drops of rose essence, 2 tsp of cardamom powder and 1 tsp vanilla essence. Mix it with your fingers (it's time to get messy) and roll them to make balls while your oven is preheating for 5 mins at 250 C. When the oven has preheated and your maximum possible balls are ready, set them on the baking tray and into the oven for 180 C for 15 mins or as applicable. You shall be able to get 17 balls in one lot.
For the chocolate nankhatai, I just added melted morde dark compound into the dough. 😊
