Made the most amazing, super simple Egg masala, today! 🍳✨

The secret? I added my garlic-coconut chutney and WOW, it turned out suuuuuper - yummy 😋💛 Flavors were next level!
Trust me, you’ve got to try this one!😉 Give it a go and let me know how it turns out!

LKLS GARLIC-COCONUT EGG MASALA RECIPE

Serves 3-4
Ready in 25-30 mins_

Ingredients:
7 eggs (hard boiled )
1 large onion finely sliced
1 small tomato chopped
3 big garlic flakes chopped
2 tbsps garlic-coconut chutney
1/2 cup yogurt
1 tsp red chilli powder
1/2 tsp turmeric
1/2 tsp garam masala
Salt to taste
2 + 1 tbsp oil
Handful of coriander chopped
Few curry leaves

Method
1. Hard boil eggs ( takes approximately 18-20 minutes), peel, put some slits and fry for a couple of minutes in a tbsp of oil. Keep aside.
2. Sauté base: Heat oil, saute curry leaves, chopped garlic, red chillies and mustard seeds, then add sliced onion. Fry till golden brown.
3. Add tomato, little salt, cover and cook till the tomatoes becomes soft, add yogurt, turmeric, chilli powder and garam masala and give a nice mix add half a cup water.
4. Magic ingredient: Stir in 2 tbsps garlic-coconut chutney and half of the chopped coriander. This is where it gets suuuuuper yummy! Let it cook for a min.
5. Bring it together: Add in the eggs, mix well, cook 3-4 mins on low flame. Garnish with the remaining fresh coriander.

Serve hot with, pao, rice or chapati. 😋

Dry Fish Pickle 🐟
Sukhe Bangda Parra 🐟 🐠

In Goa, parra was prepared before the monsoons and stored, so that during the heavy rains, when fresh fish was scarce, this dried fish 'Parra' could be fried and enjoyed with rice or pez/Kanji (that warm rice gruel )
A simple, comforting meal that carried us through the monsoon months.
It was more than just food. It was comfort, tradition, and a taste of home on rainy days 🌧️🐟🍚

LKLS Yummy Chicken Fry Recipeď!

Delicious, juicy, spicy, and packed with flavor 😋
Best enjoyed hot off the pan.... gone in 60 seconds 😋🫣🤩😍

Ingredients:
- Chicken: 500g boneless, cut into bite-sized pieces
- For the marinade:
- ½ cup thick yogurt
- 1 tbsp ginger-garlic paste
- 1 tbsp chilli flakes
- 1 tsp black pepper powder
- 1 tsp jeera powder
- 1 tsp ajwain seeds, lightly crushed
- 1 tbsp fresh coriander, chopped
- 1 tsp fresh mint leaves, chopped
- ¼ tsp orange-red food colour _optional_
- Salt to taste
- For frying: Oil, as needed

Method:
1. Marinate: In a bowl, mix chicken with all marinade ingredients. Coat well and rest for 15–20 mins. _Longer = more flavor!_
2. Fry: Heat oil in a pan on medium-high. Add chicken pieces in a single layer. Fry 2–3 mins per side till golden and cooked through.
3. Serve: Plate it hot with mint chutney, lemon wedges, or just grab and eat 😋 Finger-licking good!

Tips from my kitchen:
- Don’t overcrowd the pan — fry in batches for that perfect crisp edge.
- Skip the colour if you want — the chilli flakes give it a gorgeous colour anyway.
- Tastes amazing with roti, rice, or straight off the plate

Wanted to break away from my usual chicken curries today 👀
Spotted 2 packets of coconut-garlic chutney in the kitchen and thought… why not turn it into a chicken gravy?

So I did. And wow — it turned out SO yum 😋😍
Rich, garlicky, with that hit of coconut… total comfort in a bowl.

Tastes amazing with hot roti or steamed rice. You’ve gotta try this twist!

This chutney was a favourite of my father in law. We always had stock of this chutney in our home, but I never thought of using it for curries.

LKLS Chicken with Coconut-Garlic Chutney

Ingredients
- 500 g chicken, cut into small pieces
- 2 onions, finely chopped
- 1 tomato, finely chopped
- 2 small potatoes, peeled and cubed
- 2–3 tbsp oil
- Salt, to taste
- ¼ tsp turmeric powder
- 1 tsp garam masala (homemade)
- 1 tbsp Kashmiri chilli powder
- 1 tsp roasted cumin powder
- 1 tbsp roasted coriander powder
- 3 tbsp coconut-garlic chutney
- 2 tbsp fresh coriander, chopped

*For the Coconut Paste*
- 1 cup freshly grated coconut
- ½ cup coriander stalks
- 2 green chillies

Method
1. Marinate: Wash chicken and drain. Rub with salt, turmeric powder, and coconut-garlic chutney. Set aside for 15–20 minutes.

2. Make paste: Grind the grated coconut, coriander stalks, and green chillies to a coarse paste. Set aside.

3. Build the base: Heat oil in a pan. Add chopped onions and sauté until golden. Add chopped tomatoes and cook until soft and mushy.

4. Add spices: Lower the heat. Add turmeric, garam masala, Kashmiri chilli powder, roasted cumin powder, and roasted coriander powder. Mix well. Add ½ cup water and cook for 1 minute.

5. Cook chicken: Add the marinated chicken. Sauté on low-medium heat for 4–5 minutes until it changes color.

6. Finish the gravy: Add the ground coconut paste. Check consistency and add more water if needed. Stir in 1 tbsp chopped coriander.

7. Add potatoes: After 5 minutes, add potato cubes. Cover and cook for 12–15 minutes, or until potatoes are tender and chicken is cooked through.

8. Garnish: Finish with the remaining chopped coriander and serve hot.
