Hyderabadi Murg ka Saalan
In a heavy bottomed pan, heat a generous scoop of ghee and a tablespoon of oil. Add whole garam masalas-
¾ tspn Shah jeera
1 bay leaf
Few peppercorns
Few cloves
Few green cardamoms
¼ star anise
Few strands of mace
Add a huge scoop of ginger garlic paste and green chilli paste.
Give it a good stir add a dash of water.
Now add the washed chicken this was around 750gms.
Stir it well coating each piece with the ghee. Let it simmer.
Add salt and turmeric.
Cover and cook till all the water is released on a slow fire.
Meanwhile, in a mixer grind
4 tablespoon of curds
2 tablespoons of fried oinons
1 teaspoon of red chillie powder
1 teaspoon of dhaniya powder
½ teaspoon of jeera
8 cashews
1 teaspoon of melon seeds

Add this mixture to the chicken, give it a good stir. I put it on a tawa and gave it 'dum' and then added 2 cups of hot chicken broth and gave it a good boil.
Temper with fried green chillies.

So I started making this chicken without referring to any recipe.
When it was cooked and served Hafiz said it tastes exactly like the Saalan we get at Biryani by the kilo with the Hyderabadi Dum Biryani.
And therefore I called it 'Murg ka Saalan'
One those recipes where the ancestors were guiding you.

Dahi Kadi with Masoor Pulav
The Kadi Recipe~
1 medium sized piece of ginger
4 green chillies
Few curry leaves
2 cups of strained dahi
6 tablesoons of besan
Haldi
2 teaspoons of dhania powder
1 teaspoon chilli powder
Salt
Grind In a mixer.

Pour in a heavy vessel add equal amount of water and boil till besan is cooked.

Temper with
Rai
Jeera
Hing
Few methidana
Few peppercorns
2 slit green chillies
Curry leaves.

Add the temper to the boiling kadi.
Let it boil for a few minutes!
Done.

Yellow wala green chicken... And that's what it's called!

Rub chicken with salt, turmeric and Ginger garlic paste and keep aside.
I used pounded boneless pieces.
The marinade-
1 cup of each; Coriander leaves and Mint Leaves
A generous handful of Curry Leaves
4 heaped scoops of peanut butter
3 tablespoons of Coconut Powder.
½ a cup of full cream
2 Tablespoons of Coriander powder
A few peppercorns.
7 -8 Green Chillies
Few cloves of Garlic
2 teaspoons of Madras Curry Powder
2 Tablespoons of Oil
2 Tablespoons of Vinegar
Salt
Grind to a fine n smooth paste.
Marinate the chicken with the above and leave it for a few hours.

In a pan shallow fry for 5 to 7 minutes.
Lay them in a baking dish.
Pour on the leftover marinade.
Bake at 180 for 20 minutes.

Red Lentils Egg Curry À la Sherry
Grind to a fine pastel
¼ tspn Fenugreek Seeds
Few Black Peppercorns
2 Onions
3 Tomatoes
4 heaped tablespoons of Coconut Powder
10 to 12 Whole Dried Kashmiri Chillies
½ teaspoon Turmeric powder
2 heaped teaspoons Coriander powder.

Heat oil splutter cumin seeds, mustard seeds and curry leaves.
Add the paste. Cook till oil separates.
Add boiled and mashed Red Lentils.
2 heaped teaspoons of Curry powder.
I use Ship brand Madras Curry powder. (Amazon)
Salt to taste.
Simmer for 10 minutes. Add hot water to adjust consistency.

In a frying pan, heat oil, splutter some slot green chillies, add boiled halved eggs. Fry till golden brown.
Add them to the Lentils.
