Hyderabadi Murg ka Saalan
In a heavy bottomed pan, heat a generous scoop of ghee and a tablespoon of oil. Add whole garam masalas-
¾ tspn Shah jeera
1 bay leaf
Few peppercorns
Few cloves
Few green cardamoms
¼ star anise
Few strands of mace
Add a huge scoop of ginger garlic paste and green chilli paste.
Give it a good stir add a dash of water.
Now add the washed chicken this was around 750gms.
Stir it well coating each piece with the ghee. Let it simmer.
Add salt and turmeric.
Cover and cook till all the water is released on a slow fire.
Meanwhile, in a mixer grind
4 tablespoon of curds
2 tablespoons of fried oinons
1 teaspoon of red chillie powder
1 teaspoon of dhaniya powder
½ teaspoon of jeera
8 cashews
1 teaspoon of melon seeds
Add this mixture to the chicken, give it a good stir. I put it on a tawa and gave it 'dum' and then added 2 cups of hot chicken broth and gave it a good boil.
Temper with fried green chillies.
