Mark your calendars, foodies! If you love cheese, carb-heavy goodness, and zero regrets, the legendary Sagra della Polenta Taragna is returning to Stabello (Zogno, Valle Brembana) for two epic weekends this September!

If you think polenta is just yellow cornmeal porridge... oh boy, are you in for a life-changing surprise!

Polenta Taragna is the holy grail of Northern Italian comfort food. Originating from the mountains, it blends classic yellow cornmeal with buckwheat flour, giving it a rich, earthy flavor and a darker color. But the real magic happens in the pot: giant blocks of fresh local butter and melt-in-your-mouth mountain cheeses (like Branzi) are stirred in until it turns into a gloriously ooey-guiy, stretchy, cheesy masterpiece.

The word taragna comes from the tarai—the long wooden stick used to stir this thick liquid gold for hours over a traditional pot!

Who says you can’t enjoy a Sicilian masterpiece in the middle of a summer heatwave? 🍝☀️

Say hello to Insalata di Pasta alla Norma—the cool, refreshing, beat-the-heat twin of the traditional hot classic! Big bite-sized fusilloni, crispy fried eggplant, sweet roasted tomatoes, and a mountain of salty ricotta. Pure bliss in a bowl. 🍆🤤

Here is how to bring a slice of Sicily to your summer table:

What You’ll Need

320g Fusilloni (or any short pasta that holds sauce well!)

2 purple eggplants

500g cherry tomatoes

Salted ricotta (ricotta salata—don't skip this!)

Fresh basil & thyme

Powdered sugar (for tomato magic ✨)

Extra virgin olive oil & salt

How to Make It

The Sweet Tomatoes: Halve the cherry tomatoes, lay them on a baking sheet, dust with powdered sugar and thyme, then roast at 180°C (350°F) for 20 minutes until caramelized.

Here is how to make the crunchy staple of our Italian dreams:

The Golden Ingredients

4 large Pugliese friselle (durum wheat or whole wheat)

250g sweet cherry or datterini tomatoes

Extra virgin olive oil (be generous, no stingy pourings allowed!)

Dried oregano & fresh basil

1 garlic clove

Pinch of salt

The 4-Step Magic

Here is a glimpse into the legendary world of Sicilian tonnare:

The Tonnara: Forget simple fishing lines! A tonnara was a complex underwater maze of giant nets stretched across the sea, guiding tuna through room after room until they reached the final chamber.

The Rais: The ultimate captain and spiritual guide of the crew. The Rais read the currents, commanded dozens of fishermen (tonnarotti), and called every move like a high-seas general.

The Cialome: To sync their movements while pulling hundreds of tons of heavy nets by hand, fishermen sang hypnotic, rhythmic chants called cialome—an ancient mix of Sicilian, Arabic, and Latin.
