A few unforgettable days in Rome, together with Maurizio Ortuso and his wonderful team, filled with incredible w**es, beautiful friendships, and inspiring moments shared around the table. 🍷

From Michelin-starred restaurants such as Achilli al Parlamento to iconic w**e destinations like Casa Bleve, we had the pleasure of tasting, exchanging, and sharing stories with great friends and fellow w**e lovers.

We spoke about our history, our deep connection with this wonderful city, and the new beginning and future of Hilberg Pasquero.

It was a true pleasure to share these moments, one glass at a time, and to feel once again the magic of Rome.

Harvest begins before the day begins.

At 5:30 in the morning, the night still feels close. A coffee in the darkness, beneath a sky full of stars. No voices, no noise — just the quiet beginning of another day.

Then, slowly, the rhythm starts.

The grapes are boiling with life. The red skins leave their marks, splashes and stains on the walls, traces of what is happening inside. Everything carries the evidence of the harvest.

And before the team arrives, there are the rituals.

Cleaning. Putting everything in order. Preparing the water. Checking and arranging the tools. Making sure every detail is ready for the long hours ahead.

There is something almost sacred about these moments — the space between the late night and the early morning, when the world is still quiet and the cellar belongs only to those who are preparing it.

Harvest is not only about picking grapes. It is about these small gestures, repeated day after day. The coffee in the dark. The stars above. The red stains on the walls. The tools waiting in their place.

We had the pleasure of spending a full day on a w**e safari with Jason Miller, together with the incredible Roero crew of producers, to showcase the power, diversity, and unique identity of Roero—one of Piemonte’s most exciting and up-and-coming w**e regions.

From steep sandy hills to distinctive terroirs and passionate w**emakers, every stop revealed another side of what makes Roero so special.

🌱 The Power of Spontaneous Cover Crops in the Vineyard 🍇

Healthy vineyards start from the ground up.

Allowing spontaneous indigenous grasses and native plants to grow between vineyard rows creates a natural cover crop that protects and enriches the soil. These living plants act as a green manure, increasing organic matter, improving soil structure, enhancing water retention, and stimulating beneficial microbial activity.

By embracing the vineyard’s natural biodiversity rather than eliminating it, we help prevent erosion, reduce soil compaction, support pollinators and beneficial insects, and build long-term resilience in the ecosystem.

A thriving vineyard is not only about the vines we see above ground, but also about the life flourishing beneath our feet.

Across many cultures, farmers have traditionally followed the lunar cycle when planning important tasks in the field. This practice, often called lunar farming, is based on the belief that the Moon’s phases influence natural rhythms on Earth, just as it affects the tides.

According to tradition, the waxing Moon—the period when the Moon appears to grow larger—is considered favorable for planting crops that develop above the ground. The waning Moon, as the Moon decreases in size, is often associated with root crops, soil preparation, and pruning.

In vineyards, some growers have historically timed activities such as pruning, grafting, and harvesting according to specific lunar phases. Similar traditions can be found throughout Europe, Asia, Africa, and the Americas, where generations of farmers passed down lunar calendars as practical guides for agricultural work.

Today, while modern agriculture relies heavily on scientific methods and technology, lunar farming traditions continue to be followed by many growers around the world. For some, it is a connection to ancestral knowledge; for others, it is a way of working in harmony with the rhythms of nature.

Whether viewed as tradition, cultural heritage, or agricultural philosophy, the relationship between the Moon and farming remains one of humanity’s oldest and most fascinating connections to the natural world.
