Piers and Chocolate Focaccia
For the flour I used the new Blackery flour by which already contains the pierfect amount of cocoa to give it that dark color and rich flavor.

Ingredients for 2 focaccia

500 g flour
280 g water
70 g milk
70 g sugar
20 g sugar for the top
10 g fresh yeast
5 g salt
15 g olive oil in the dough + extra for the tray
100 g dark chocolate
8 pears
Nutella as needed, generously

Mascarpone cream
250 g mascarpone
40 g sugar
80-100 g fresh cream

Preparation
Put flour, sugar, water and yeast into the mixer. Knead for 5-6 minutes on low speed. Add the milk little by little, letting it absorb properly. Once the dough is smooth, add the salt. Add the oil at the end and finally the chopped dark chocolate. Let it rise until doubled in size. Transfer the dough onto the counter and divide it into two. Lightly oil the tray and gently stretch the dough. If Slice the pears and place them generously on top. Let it rest 20 minutes then. Finish with sugar over the surface. Bake at 200°C until fully cooked, in my oven about 22 minutes. Once the focaccia is warm, cut it and add plenty of Nutella inside.

For the cream, mix mascarpone and sugar together, then add a little cream until smooth and creamy. Serve on the side as an accompaniment.

During the , a culinary event that raised over €30,000 for an organization supporting children with cancer, one of the hosts, .bolivar_sempregirando , comes up to me and says: Chef, I have a dream… I want you to slap me.

I laugh and say: alright, let’s do it.

And as soon as the event ended, instead of going home, we started shooting this video. This is the result😝
