Water is essential to the life of the olive tree.

In Sicily, the sea also plays an important role: its moderating influence and gentle coastal breezes help create the Mediterranean climate in which the olive trees grow, shaping the character and aromas of their fruit.

Balanced irrigation is therefore crucial. Excessive water stress can limit fruit development, while too much water can alter the concentration of compounds that contribute to the oil’s flavor.

From the sea to the soil, every drop helps shape the identity of Sicilian olives.
