๐ฎ๐น ๐ Vellutata di Zucca con Crostini (Pumpkin Soup with Croutons)
๐ง Ingredients:
Pumpkin โ 400g (cubed)
Carrot โ 1 (sliced)
Onion โ 1 (chopped)
Olive oil โ 2 tbsp
Vegetable broth โ 700ml
Coconut cream โ 100ml
Salt & pepper โ to taste
Rosemary โ 1 sprig
Croutons โ for topping

Sautรฉ onion, carrot, and pumpkin in olive oil.
Add broth and rosemary; cook until pumpkin is tender.
Blend until smooth and creamy, then stir in coconut cream.
Season to taste and top with croutons.
