Hinode Mirin 【US Official】 ‘s MIRIN makes spare ribs extra tender!!!

✔️Ingredients (Serves 4)
Spare ribs: 600g
Salt: 1/2 teaspoon
Coarsely ground black pepper: a pinch
★ Hinode Cooking Sake (for seasoning): 2 tablespoons
Olive oil: 2 teaspoons
★ Hinode Cooking Sake: 2 tablespoons
Onion (thinly sliced): 200g
Garlic (minced): 1 clove
Olive oil: 2 teaspoons
Cake flour: 2 teaspoons
Pineapple: 120g (net weight)
Salt and coarsely ground black pepper: each a pinch

[A]
Tomato juice: 150ml
★ Hinode Shinnmiryou: 3 tablespoons
Worcestershire sauce: 1 teaspoon
Soy sauce: 2 teaspoons
Water: 300ml
Consommé: 1/2 teaspoon

✔️Instructions
1) Rub the spare ribs with salt, coarsely ground black pepper, and cooking sake for seasoning, and let it marinate for about 20 minutes.

2) Heat 2 teaspoons of olive oil in a frying pan and add the marinated spare ribs, wiping off any excess moisture with a paper towel. Sear all sides. Add cooking sake and simmer until reduced, then remove from the pan.

3) In a pot, heat 2 teaspoons of olive oil, add the onion and garlic, and sauté until browned. Sprinkle in the cake flour and stir-fry for about 1 minute.

4) Add the spare ribs, [A] mixture, and pineapple to the pot, heat until boiling, skim off any scum, then reduce to low heat, cover with a drop lid, and simmer for about 30 minutes.

5) Remove the drop lid and reduce the cooking liquid to half. Adjust the taste with salt and coarsely ground black pepper.

Use Hinode Mirin 【US Official】 's MIRIN to make a refreshing sorbet. The natural sweetness and flavor of MIRIN help mellow out the sharpness of the pineapple🍍

✔︎Ingredients (Serves 4)
Canned pineapple slices: 6 slices
MIRIN: 3 tablespoons
Water: 100 ml
Agar powder: 4 g
Sparkling water: 400 ml

✔︎Instructions
1. Finely chop the canned pineapple slices.
 
2. In a pot, combine the chopped pineapple, MIRIN, water, and agar powder. Stir well to dissolve, then heat over medium heat. Once it comes to a boil, reduce to low heat and continue cooking for 2 minutes while stirring constantly.
 
3. Pour the sparkling water into a mixing bowl, add the heated mixture, and stir to combine. Transfer to a freezer-safe container and freeze until firm.

Hinode Mirin 【US Official】 ‘s ORGANIC MIRIN creates a perfect sauce for not only beef, but for fish dishes!!!

✔️Ingredients (Serves 4)
Mackerel (fillets): 4 pieces
Ginger: 2 pieces
Ito Mitsuba: as needed
[A]
Miso: 60g
★ Hinode Organic Mirin Type: 5 tablespoons
★ Hinode Organic Pure Rice Cooking Sake: 6 tablespoons

✔️Instructions
1. Place the mackerel in a colander and quickly pour boiling water over them (blanching). *If the smell is a concern, sprinkle a moderate amount of cooking sake and let it sit for a while.

2. Julienne one piece of ginger and grate the other piece, then mix the grated ginger with [A] thoroughly.

3. Spread aluminum foil and place the mackerel on it. Pour 1/4 of the [A] mixture over each piece and wrap them securely.

4. Arrange the wrapped mackerel in a frying pan, cover with a lid, and cook over medium heat for 15 minutes until the aluminum foil puffs up. (Alternatively, you can bake them in a toaster oven for 8 minutes until the aluminum foil puffs up.)

5. Plate the cooked mackerel, garnish with the julienned ginger, and add ito mitsuba.

Ground chicken: 250g
Silken tofu: 1/2 block (150g)
Green onion: 1/2 stalk
Ginger: 1 piece
★ Hinode Organic Pure Rice Cooking Sake: 1 tablespoon
Salad oil: 2 teaspoons
Salt: a pinch
Potato starch: as needed
Soft-boiled eggs: 4
Ito Mitsuba: as needed

Soy sauce: 2 tablespoons

✔️Instructions
1. Wrap tofu in kitchen paper and microwave (600W) for 2 minutes, then drain and let cool.
Finely chop the green onion. Grate the ginger. Roughly chop the ito mitsuba.

2. In a bowl, mix the ground chicken and salt until sticky. Add tofu, green onion, ginger, and organic pure rice cooking sake, and mix further. Divide the mixture into 12 portions and shape them into discs.

3. Heat salad oil in a frying pan, lightly coat the discs with potato starch, and arrange them in the pan. Cook on both sides until browned. Add [A] and simmer until glossy.

✔️Ingredients (Serves 4)
Hanpen: 1 piece (100g)
Eggs: 4
Milk: 2 tablespoons
★ Hinode Organic Mirin: 2 tablespoons
★ Hinode Organic Pure Rice Cooking Sake: 2 teaspoons
Salad Oil: a little
Ito Mitsuba: appropriate amount


✔️Instructions
1. Tear the hanpen into pieces and place them in a food processor. Add the eggs, milk, Hinode Organic Mirin, and Hinode Organic Pure Rice Cooking Sake, and blend well for 1 minute. (If you don’t have a food processor, you can use a hand mixer or mash the hanpen until smooth, then mix with the other ingredients and whisk until fluffy.)

2. Heat salad oil in an omelette pan, pour in the mixture, cover with aluminum foil, and cook over medium heat for 1 minute. Then, lower the heat and cook for another 12 minutes. Turn off the heat and let it steam for 3 minutes with the lid on.

3. Cut the omelette into squares, plate it, and garnish with roughly chopped ito mitsuba.

[Egg Custard]
Eggs: 2

[Custard Mixture(A)]
Dashi stock: 300ml
Light soy sauce: 2 teaspoons
★ Hinode Organic Mirin: 1 teaspoon
★ Hinode Organic Pure Rice Cooking Sake: 1 teaspoon

[Ankake (thick sauce) ]
Boiled shrimp: 8
Chinese cabbage: 1/3 leaf
Carrot: 1/6
Shiitake mushrooms: 2
Ginger: 1 clove
Dried scallops: 2
Potato starch dissolved in water (potato starch: 2 teaspoons, water: 2 teaspoons)

[Ankake Mixture(B)]
Dashi stock: 200ml
★ Hinode Organic Mirin: 1 tablespoon
★ Hinode Organic Pure Rice Cooking Sake: 1 tablespoon
Light soy sauce: 1 tablespoon


✔️Instructions
Preparation:
1. Cut the Chinese cabbage into 1cm wide strips.
2. Cut the carrot into 2-3mm thick sticks.
3. Remove the stems from the shiitake mushrooms and slice them thinly at an angle.
4. Julienne the ginger.
5. Soak the dried scallops in hot water (50ml, not included in the ingredients) to rehydrate.

Cooking:
1. In a bowl, beat the eggs and mix in [A]. Strain the mixture through a sieve into serving dishes. Steam in a steamer with steam rising on medium heat for 3 minutes, then on low heat for 8 minutes.
2. In a pot, combine the boiled shrimp, Chinese cabbage, carrot, shiitake mushrooms, ginger, rehydrated dried scallops (along with the soaking liquid), and [B]. Bring to a boil. Add the dissolved potato starch and heat until thickened (ankake sauce).
3. Pour the ankake sauce over the steamed egg custard.
