レストラン・カリストガのオーナーは、かつてナパで結婚式の会場を探していた際に、このヴィンヤードを訪れたことがあります。

クロペガスが大切にしてきたのは、樽や凝縮感の強さではなく、食事と並んだときの心地よいエレガンス。アルコールや香りが前に出すぎない、穏やかなバランスです。

Behind this w**e lies a quiet love story.

Ian Schram met Mitsuko in Japan in 1955. After a successful career in publishing, he left it behind to study w**e in Europe, inspired by her love for it. His search for the right place eventually brought him to Napa Valley, where Clos Pegase was founded in 1984.

The owners of Restaurant Calistoga visited this vineyard many years ago while searching for a beautiful location for a wedding in Napa.

The estate has always valued elegance over power, focusing on balance and a food friendly style rather than heavy oak or concentration.

This Sauvignon Blanc is made from 100% Sauvignon Blanc Musqué grown in estate vineyards, including Mitsuko’s Vineyard in the cool Carneros area. The Musqué clone offers gentle aromatics, while the w**emaking highlights freshness and restraint.

Chilled and served with food, the w**e shows harmony rather than intensity, fitting naturally into a meal.

センティアムは、ワインを「味わうもの」である前に、「感じ取るもの」として捉えています。味覚、嗅覚、触覚、視覚、聴覚、そして直感。私たちはそれらを合わせて“六感”と呼び、自然と向き合うための大切な手がかりと考えています。

このワインが生まれたのは、カリフォルニア北部メンドシーノ・カウンティ。多様な土壌と冷涼な気候に着目し、ロワールの白ワインに着想を得た、ミネラル感を軸にした生き生きとしたスタイルを目指しています。選ばれたのは、有機栽培を行う家族経営の小規模な古木の畑。自然と共に生き、長い時間をかけて土地を理解してきた栽培家の知恵が、ワインの輪郭を形づくっています。

造り手は、ティム・モンダヴィの娘、キアラ・モンダヴィ。
このソーヴィニヨン・ブランは、彼女が醸造家として初めて世に送り出した一本です。祖父ロバート・モンダヴィが1960年代に確立した、辛口スタイルのフュメ・ブラン。その精神に敬意を払いながら、今の感性で静かに再解釈されています。写真には、キアラが自分で制作した Sentium のラベルの原画が写っており、彼女は（写真にはありませんが）Continuum のラベルも制作し、家を訪れたオーナーにその Sentium の原画を贈りました。

Sentium approaches w**e not only as something to taste, but as something to perceive. Sight, touch, sound, aroma, intuition, and flavor come together to create a deeper connection with nature.

From Mendocino County in northern California, this w**e reflects diverse soils and a cool climate. Inspired by Loire Valley whites, it focuses on mineral clarity and freshness. The grapes come from small, family-run vineyards practicing organic farming, where generations of knowledge shape the expression of place.

This Sauvignon Blanc marks Chiara Mondavi’s first release as a w**emaker. Inspired by her grandfather Robert Mondavi’s legacy of dry-style Fumé Blanc, Sentium offers a quiet, thoughtful interpretation rooted in the present. You can see in the photos the Sentium label drawing that Chiara created herself; she also created the Continuum label (not shown in the photo) and gave the Sentium drawing to the owner when he visited her home.

Blended from 93% Sauvignon Blanc and 7% Sémillon, it is a w**e guided by intuition, respect for nature, and a sense of continuity.

シュラムスバーグは、アメリカ産スパークリングワインの歴史において特別な存在です。ナパ・ヴァレーの山腹に設立され、1965年から一貫してシャンパーニュ方式によるワイン造りに取り組んできました。当時まだ評価が確立されていなかったカリフォルニアのスパークリングにおいて、その可能性を信じ続けてきた数少ない造り手です。

1972年、ニクソン大統領の訪中時、周恩来首相との公式晩餐会でこのブラン・ド・ブランが提供されたことで、世界的にその名が知られるようになりました。以来50年以上にわたり、歴代アメリカ大統領の公式晩餐会で提供され続けているという事実が、このワイナリーの信頼を物語っています。

写真は、レストラン・カリストガのオーナーがナパのシュラムスバーグを訪れ、CEO兼オーナーのデイヴィス氏と面会した際の様子です。

このワインはシャルドネ100%。ノース・コーストの複数の畑から収穫されたブドウを使用し、瓶内二次発酵後、澱とともに24か月熟成。きめ細かな泡とフレッシュな酸が際立つ、ドライで引き締まったスタイルに仕上がっています。

Turnbull Cabernet Sauvignon Estate Grown Napa Valley 2022 comes from Oakville, Napa Valley, with vineyards neighboring Opus One and facing Robert Mondavi.

Its name comes from the legend of a brave servant who saved a king from a charging bull, reflecting courage and boldness as core values.

Made exclusively from estate-grown fruit across four estate vineyards (three in Oakville, one in Calistoga), Turnbull oversees everything from vineyard work to w**emaking and bottling.

A mix of soils and sites (including volcanic and alluvial areas, plus higher-elevation Calistoga) brings structure, texture, and depth. ジェイ・シュラムは、1987年産ブドウから造られ1992年に初リリースされた、シュラムスバーグのフラッグシップ。長期熟成を前提にした最高峰キュヴェです。約150年前に設立され、1965年にデイヴィーズ夫妻が所有して以降、伝統的製法のスパークリングに専念してきました。
こちらの写真は、レストラン・カリストガのオーナーがナパのシュラムスバーグを訪れ、ワイナリーのCEO兼オーナーデイヴィス氏と面会した際の様子です。

ピノ・ノワール81%、シャルドネ19%。手摘み収穫に始まり、醸造から瓶内熟成、ルミアージュまで多くの工程を手作業で行い、敷地内カーヴで熟成。ラベル貼りも手作業で仕上げられます。約270万本を管理・熟成するセラーの中でも、時間と手間を惜しまない象徴として存在する1本です。

Founded in 2005 by Tim Mondavi and his family, Continuum was created to carry forward the philosophy and history established by Robert Mondavi.

All fruit comes from Sage Mountain Vineyard on Pritchard Hill, east of Napa Valley. Rocky volcanic soils and elevation bring concentration, complexity, and vitality. In 2021, despite drought, the growing season remained steady and the fruit ripened with strength and freshness.

Floral notes, black cherry, wild berries, sage, and bay unfold gradually as the w**e meets air. It can be enjoyed now, yet clearly rewards long aging.

This w**e is tied to Napa Valley’s history.

Silverado Vineyards was founded in 1981 by Diane Disney Miller and Ron Miller. They began planting in the late 1960s in what became the Stags Leap District, and grapes from these sites were used in w**es served at the 1976 Paris Tasting.

In June 2022, Foley Family W**es acquired Silverado with the intention of continuing the Miller family’s traditions.

From the estate grown Miller Ranch in Yountville, this blend of 96% Sauvignon Blanc and 4% Sémillon offers citrus and tropical notes, fresh acidity, and a clean finish.

Maître de Chai Chenin Blanc Sparkling W**e Wilson Vineyard Clarksburg / メートルドシェシュナンブランスパークリングワインウィルソンヴィンヤードクラークスバーグ

サクラメント川河口の三角州に広がるクラークスバーグ南部。冷涼な気候と水の影響を強く受けるこの土地で育ったシュナンブランから造られたスパークリングワインです。

ブドウはウィルソン家が所有するウッドランチの畑。1998年植樹の区画で、近年は有機栽培へと転換されています。この畑の特徴は、数字にも表れるしっかりとした酸。

発酵は土着酵母で行い、ステンレスと旧樽を併用して6か月熟成。その後、シャンパーニュ方式で瓶内二次発酵を行い、12か月のティラージュ熟成を経て、2022年2月に手作業でデゴルジュマンされています。

pHは3.3、総酸度は6.34。フレッシュさが印象に残る、すっきりとしたスタイルです。果実味を前に出すというより、品種と土地の輪郭をきれいに感じさせるタイプ。

造り手は、メートルドシェ。ナチュールムーブメントの現場で経験を積んだAlex PittsとMartin Winterによるワイナリーで、人為的な操作を最小限に抑え、畑とブドウが持つ要素をそのままワインに映すことを大切にしています。
2019年には米国の全国紙『San Francisco Chronicle』にて、W**emakers to Watch（最も注目すべき醸造家）に選ばれ、現在最も注目される若手コンビのひとつです。
このスパークリングも、造りの情報そのものがワインの個性を語る1本です。

From the southern part of Clarksburg, where the Sacramento River delta brings cool air and water influence, this sparkling Chenin Blanc is made from fruit grown at Wilson Vineyard.

The vines were planted in 1998 and have recently transitioned to organic farming. High natural acidity is a defining characteristic of this site.

Fermented with native yeast, aged for 6 months in stainless steel and neutral oak, then produced using the traditional bottle fermentation method. After 12 months on tirage, the w**e was hand disgorged in February 2022.

With a pH of 3.3 and total acidity of 6.34, the w**e shows a fresh, clean profile. Rather than emphasizing richness, it highlights clarity, grape character, and a sense of place.

Produced by Maître de Chai, a project founded by Alex Pitts and Martin Winter, focused on minimal intervention and clear site expression. In 2019, they were named W**emakers to Watch by the San Francisco Chronicle, marking them as one of the most exciting young w**emaking teams in the United States. A sparkling w**e where vineyard and process speak louder than technique.

ソノマ南部、アローヘッド・マウンテンの麓。
南西向きの丘に広がる有機畑「アローヘッド・スロープ」で育ったリースリングから、このワインは生まれました。

造り手はスクライブ。
4代にわたりカリフォルニアで農業を営んできたマリアーニ兄弟が、2007年にこの荒れ果てた土地と向き合うところから物語は始まります。
かつて養鶏場だった跡地を整え、生態系を取り戻すことから始め、土壌と斜面の輪郭を再生し、昆虫や植物が共存する畑へと導いてきました。

この場所は、1850年代にドイツ移民が初めてリースリングを植えた土地でもあります。
スクライブのリースリングは、その歴史をなぞるのではなく、今の土地の姿をそのまま映すことを選んでいます。

強い樽香や過度なアルコール感は求めず、あくまでピュアに。
冷やしてグラスに注ぐと、構えすぎていない、すっとした空気感。
料理と合わせることで、このワインの輪郭が自然と立ち上がってきます。

ワイン造りは農業であり、人が集うきっかけであってほしい。
そんなスクライブの哲学が、静かに、でも確かに伝わってくるリースリングです。

From the southern part of Sonoma, at the foot of Arrowhead Mountain, this Riesling comes from Scribe’s organically farmed Arrowhead Slope vineyard, facing southwest and shaped by the surrounding hills.

Scribe is run by the Mariani brothers, fourth-generation California farmers who began restoring this neglected land in 2007. What was once a former poultry farm was gradually returned to a healthy ecosystem, with soils, slopes, plants, and insects brought back into balance.

This site holds historical significance: Riesling was first planted here by German immigrants in the 1850s. Rather than recreating the past, Scribe focuses on expressing the vineyard as it exists today.

The w**emaking avoids heavy oak and high alcohol, aiming instead for clarity and purity. Chilled and poured, the w**e feels open and unforced. With food, its character becomes even clearer, revealing itself naturally rather than demanding attention.

For Scribe, w**e is an extension of farming and a reason for people to gather. This Riesling quietly reflects that philosophy, offering a sense of place without excess.
