Hitosuji is one of the hardest counter seats to land in ramen right now — I waited 45 minutes on a weekday just to get in the door, and it's a tiny place. So I went big and ordered two bowls: the Chuukasoba and the Tantanmen, both loaded with every topping on the menu.
