π How to Cook Rice with Beef, Plantain & Fresh Salad
This dish blends seasoned rice, tender beef, sweet fried plantains, and a refreshing saladβperfect for a hearty, balanced meal.
π₯ Ingredients (3β4 servings)
For the rice & beef:
- 2 cups rice (long-grain or basmati)
- 300g beef chunks (bone-in for flavor)
- 2 tbsp vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tsp curry powder or paprika
- 1 tsp turmeric (for color)
- 1 beef stock cube (optional)
- Salt & black pepper to taste
For the plantains:
- 2 ripe plantains, sliced
- Oil for frying
- Pinch of salt
For the salad:
- 1 tomato, sliced
- Β½ red onion, thinly sliced
- Β½ red bell pepper, chopped
- Fresh cilantro (dhania), chopped
- 1 tbsp lemon juice
- Pinch of salt
π₯ Cooking Instructions
1. Prepare the beef
- Boil beef chunks with salt, garlic, ginger, and a little water until tender.
- Drain and set aside, reserving the broth.
2. Cook the rice
- Heat oil in a pot, sautΓ© onions until golden.
- Add curry powder, turmeric, and beef chunks. Stir well.
- Add rice and 3Β½ cups of water (or beef broth for richer flavor).
- Cover and cook until rice is fluffy and grains are separate.
3. Fry the plantains
- Heat oil in a pan.
- Fry plantain slices until golden brown on both sides.
- Sprinkle lightly with salt.
4. Make the salad
- Mix tomatoes, onions, bell peppers, and cilantro.
- Season with lemon juice and salt.
5. Assemble & Serve
- Plate rice with beef, add fried plantains on the side, and top with fresh salad.
- Serve hot for a complete, colorful meal.
