Its an art.. at Least for me..
I grew up witnessing my grandmother cooking every meal with a mouth watering, finger licking effect.
People who were around ( family,friends, neighbors) knew that much abt her..
This woman cooks a meal which, anyone, after having a taste would ask for more..she was that good.. from the fresh fish to pork, black fish,(what we call mashwen), she knew how to prepare every ítem to ensure that it tasted and smelled just right. She loved her food.. her main meal at mid day.. I always hoped to emulate that skill..
She taught me a few " tricks" in the game.. as stubborn as the meat or dried beans are she always had a trick up her sleeve..
I almost do...she left us for the great beyond at a ripe age of 95...i continue to seek her advice on certain issues of cooking...
Over the years i have acquired the love of preparing mainly things local.
At Chateau we make it a habbit of preparing the local produce in a manner that would trigger questions regarding the prepared item's make up. From what we call makabou, green banana, breadfruit, ochro, dasheen..name it..never the usual.
I pride myself in creating something new and fortunately for me, always tastes so good.
I never forget comments from my clients like " what u have today?....that lady always prepare something different" or " how did u do this? Can I share the secret with my wife?"..cherrished moments for me..
And the same goes for a sumptuous vegetarian meal..a troublesome spot for some food establishments which are of the notion that a vegan meal is a basic rice, peas with a little salad, not anymore right? .... at chateau we take pleasure in providing a full or semi plant based meal to your heart's or mouth's delight...I've never been disappointed and neither will you...the rest is left for your experience...
Nothing feels better than knowing that your wholesome soups tastes just like your grandma's...creamy, tasty but meatless..
