A creamy and comforting egg sandwich filling that's quick to make and perfect for busy mornings. Made with simple ingredients and a touch of Fondré for extra creaminess, this easy lunchbox favourite is packed with flavour and best served on soft bread for a wholesome meal made with love.

What you'll need:

– 6 soft-boiled eggs, at room temperature
– 1 tbsp mayonnaise
– 1 tbsp Fondré
– 2 tsp Dijon mustard
– 2 tsp finely chopped chives
– 1/2 tsp black pepper
– 1/8 tsp salt
– 8 slices soft white sandwich bread
– Fondré, for spreading

Method:

1️⃣ Place the eggs in a bowl and gently mash with a fork. Once mostly broken up, continue mashing until smooth and creamy.

2️⃣ Add the mayonnaise, Fondré, Dijon mustard, chopped chives, black pepper, and salt. Mix gently until well combined.

3️⃣ Spread Fondré onto the bread slices. Divide the egg filling evenly between 4 slices and spread edge to edge. Top with the remaining slices, trim the crusts if preferred, and cut into halves or triangles for easy lunchbox packing.
