When you’re shaping sourdough before the final rise, one of the most important things you’re doing is creating surface tension. This simply means pulling the outer layer of the dough gently but firmly so it becomes tight and smooth, not torn, not forced, just gathered into strength.
That “skin” you create is what helps the dough rise upward instead of outward, because it holds the gases in place like a balloon instead of letting them escape or spread sideways.
Without enough surface tension, the dough will flatten during proofing or lose its shape in the oven, even if your fermentation was perfect. With too much force, you’ll tear the gluten network and weaken it instead, and the dough will rise unevenly or burst awkwardly where it wasn’t sealed well. The goal is balance: strength without stress.
A well-shaped dough feels alive under your hands... slightly resistant, springy, and holding itself together without slumping. That tension also controls where steam escapes in the oven, which is why loaves with clean shaping open beautifully at the score rather than randomly along the sides or bottom.
So during final shaping, you’re not just making it look neat. You’re deciding whether your loaf will rise tall or spread flat, open cleanly or explode unevenly. Surface tension is structure, and structure is what allows everything else to shine.

To create surface tension properly, you want to gently stretch the outer layer of the dough toward the bottom and tuck it under, over and over, while keeping the top smooth and tight.
Think of it like wrapping a present, not kneading.
Your hands are guiding, not squeezing.
If you’re doing a boule (round loaf), you simply drag the dough toward you on the counter using small pulls, letting the friction of the surface tighten the top. Rotate slightly and repeat. Each pull gathers strength. You stop the moment the top feels smooth, slightly elastic, and no longer slack.
For a batard (oval loaf), you first fold the sides in gently toward the center, then roll it forward tightly but smoothly, sealing the seam underneath with your fingers. Again, no forcing. You’re wrapping tension around the dough, not pressing it into submission.
A good indicator you did it right: the dough holds its shape on the counter, doesn’t sag outward, and feels springy, as if it’s holding itself together and would “bounce back” if nudged.
If instead it spreads immediately, you didn’t build enough tension. If it tears or resists aggressively, you pushed too far.
