Cow Brain Recipe 🍲🧠

Ingredients:

β€’ Beef brain - 750 g
β€’ Onions - 2
β€’ Ginger and garlic paste - 1 tablespoon
β€’ Green chili - 2
β€’ Curry leaves 🌿
β€’ Rambai leaves
β€’ Chili powder - 1 tablespoon
β€’ Black pepper - 1/2 tablespoon
β€’ Turmeric - 1/2 teaspoon
β€’ Curry powder - 1 tablespoon
β€’ Siragam (cumin seeds) - 1 tablespoon
β€’ Salt - As required πŸ§‚
β€’ Cardamom - 3 pods

Steps:

1. Prep the Brain 🧠:
β€’ Clean the beef brain thoroughly and cut it into small pieces.

2. Sauté the Onions 🌰:
β€’ Heat some oil in a pan.
β€’ Add the finely chopped onions and sautΓ© until golden brown.

3. Add Flavors 🌢️:
β€’ Add ginger and garlic paste to the onions and sautΓ© until the raw smell disappears.

4. Spice It Up 🌑️:
β€’ Add green chilies, curry leaves, and rambai leaves.
β€’ Stir well and cook for a minute.

5. Mix in the Spices πŸ₯„:
β€’ Add chili powder, black pepper, turmeric, curry powder, and siragam.
β€’ Mix everything well and let it cook for a few minutes until the spices are well blended.

6. Cooking the Brain 🍲:
β€’ Add the brain pieces to the pan.
β€’ Mix well to coat the brain with the spices.
β€’ Cook on medium heat, stirring occasionally, until the brain is cooked through.

7. Season and Simmer 🍽️:
β€’ Add salt to taste.
β€’ Add the cardamom pods.
β€’ Cover and let it simmer for a few minutes to allow the flavors to meld together.

- 1 tbsp Biriyani masala πŸ›
- 180 g Curd πŸ₯›

**For the Rice:**

- 1 Biriyani flower (Star anise) 🌟
- Salt to taste πŸ§‚
- 1 Dry lime πŸ‹
- 1 tbsp Oil πŸ›’οΈ
- Clove 🌿
- 2 Biriyani leaves πŸƒ
- 1 tsp Ginger and garlic paste πŸ§„
- 25 g Parsley 🌿

# # # # Preparing the Prawn Curry
1. **Heat the Oil:** In a large pan, heat 250 ml of prawn fried oil. πŸ›’οΈ

2. **SautΓ© Onions:** Add 400 g of sliced onions and sautΓ© until golden brown. πŸ§…

3. **Add Tomatoes and Chilies:** Add 250 g of chopped tomatoes and 5 green chilies. Cook until the tomatoes soften. πŸ…πŸŒΆοΈ

4. **Ginger and Garlic Paste:** Stir in 75 g of ginger and garlic paste and cook until the raw smell disappears. πŸ§„
