Prawn Biryani Recipe

**For the Prawn Curry:**
- 750 g Basmati rice π
- 1 kg Prawns π€
- 250 ml Prawn fried oil π’οΈ
- 400 g Onion π§
- 250 g Tomato π
- 5 Green chilies πΆοΈ
- 75 g Ginger and Garlic paste π§
- 75 g Parsley πΏ
- Cinnamon sticks π³
- 2 Biriyani leaves π
- Cardamom pods π°
- 2 tbsp Chili powder πΆοΈ
- 1 tsp Turmeric β¨
- Β½ tbsp Curry masala π
- 1 tbsp Biriyani masala π
- 180 g Curd π₯
- Salt to taste π§
**For the Rice:**
- 1 Biriyani flower (Star anise) π
- Salt to taste π§
- 1 Dry lime π
- 1 tbsp Oil π’οΈ
- Clove πΏ
- 2 Biriyani leaves π
- 1 tsp Ginger and garlic paste π§
- 25 g Parsley πΏ
# # # Steps
# # # # Preparing the Prawn Curry
1. **Heat the Oil:** In a large pan, heat 250 ml of prawn fried oil. π’οΈ
2. **SautΓ© Onions:** Add 400 g of sliced onions and sautΓ© until golden brown. π§
3. **Add Tomatoes and Chilies:** Add 250 g of chopped tomatoes and 5 green chilies. Cook until the tomatoes soften. π

4. **Ginger and Garlic Paste:** Stir in 75 g of ginger and garlic paste and cook until the raw smell disappears. π§
5. **Spices:** Add cinnamon sticks, 2 biriyani leaves, cardamom pods, 2 tbsp of chili powder, 1 tsp of turmeric, Β½ tbsp of curry masala, and 1 tbsp of biriyani masala. Cook for a few minutes until the spices are fragrant. π³ππ°πΆοΈβ¨π
6. **Curd and Salt:** Add 180 g of curd and salt as required. Mix well. π₯π§
7. **Prawns:** Add 1 kg of cleaned prawns to the mixture. Cook until the prawns are fully cooked and the curry thickens. π€
8. **Parsley:** Finally, add 75 g of chopped parsley and mix well. Set the prawn curry aside. πΏ

1. **Wash the Rice:** Wash 750 g of basmati rice thoroughly and soak for 30 minutes. π
2. **Boil the Rice:** In a large pot, boil water with 1 biriyani flower (star anise), salt to taste, 1 dry lime, 1 tbsp oil, cloves, 2 biriyani leaves, 1 tsp ginger and garlic paste, and 25 g of parsley. ππ§ππ’οΈπΏππ§πΏ
3. **Cook the Rice:** Add the soaked basmati rice to the boiling water. Cook until the rice is 70% done. Drain the water and set the rice aside. π
# # # # Assembling the Biryani
1. **Layering:** In a large pot, start with a layer of the prawn curry at the bottom. Add a layer of the partially cooked rice on top. Repeat the layers, finishing with a layer of rice. π€π
2. **Seal and Cook:** Seal the pot with a tight-fitting lid and cook on low heat for 20-25 minutes to let the flavors meld together. π²
3. **Serve:** Once done, gently mix the layers together and serve hot. π
