Sri Lankan Pancakes

Ingredients (for a few persons):

Flour – 250 g

Egg – 1

Turmeric Powder – 5 g

Salt – 6 g

Vanilla Essence – 3 ml

Sugar – 250 g (adjust to your taste)

Cardamom – 4 or 5 pods

Cumin Seeds – 5 g (roasted on low heat)

Water – 170 ml

Grated Coconut – 1 coconut

Method

👨‍🍳 First, we make the pancake batter. Then we prepare the filling.

Step 1
Take a bowl and add flour, turmeric powder, and salt (to taste). Mix well.

Step 2
Add the egg and water. Mix all the ingredients until smooth, with a slightly thick consistency.

Step 3
Add 3 ml of vanilla essence and mix again. Keep the batter aside for 15–20 minutes.

Step 4
Now prepare the filling. Heat a pan or non-stick pot, add sugar, and let it caramelize.

Step 5
Once the sugar is caramelized, add the grated coconut. Mix well, then add the roasted cardamom and cumin seeds. Stir until the mixture turns light brown.

Step 6
Make thin pancakes with the batter, place some coconut filling inside, and roll them up.

Serve warm with tea. ☕🥞

Let's make Masala Chai,

Ingredients we need (Measure for 1 person)

Jugs of water – 2

Milk Powder – 50 g

Sugar – 20 g (as per your taste)

Tea leaves – 15 g

Cinnamon – 3 little sticks

Cardamom – 3 or 4 nos

Clove – 3 or 4 nos

Method:

Step 1
First, keep half a jug of water to boil.

Step 2
When the water is boiling, add milk powder, sugar, cinnamon, cardamom & clove into the boiling water jug.

Step 3
Boil some of the other water for tea leaves. When this water is boiled, get another little jug & add hot water and tea leaves into the jug, then keep until it becomes the color of tea.

Step 4
When the milk jug comes to boiling temperature, we have to add sugar into the boiling milk.

Step 5
Then strain the tea leaves into the boiling milk jug.

Step 6
Finally, strain the masala chai into a tea cup, then you can serve to the visitor.
