LT. Kugelis su voveraičių padažu 🍄🟫🥔✨
Jeigu mėgstate kugelį, šį variantą tikrai verta išbandyti.
Rūkytą šoninę kartu su svogūnais kepiau, kol šoninė išleido riebalus, ir apskrudo. Įdėjau kelis gabalėlius sviesto ir viską sumaišiau su tarkuotomis bulvėmis. Užpyliau karštu pienu, pagardinau druska, smulkiai maltais juodaisiais pipirais, tarkuotu muskato riešutu, trintais džiovintais voveraičių grybais bei žiupsneliu maltų lauro lapų. Viską gerai išmaišiau ir kepiau 220 °C orkaitėje, kol kugelis gražiai apskrudo ir visiškai iškepė.
Kol kugelis kepė, gaminau padažą. Svogūnus apkepiau iki lengvo auksinės spalvos, sudėjau smulkiai pjaustytas voveraites, česnaką ir šviežią čiobrelį. Grybus kepiau, kol išgaravo jų išleistas skystis ir jie lengvai apskrudo. Tuomet įpyliau brendžio, išdeginau alkoholį, supyliau sultinį ir grietinėlę, o padažą kaitinau, kol sutirštėjo. Įmaišiau grietinę, pagardinau druska, juodaisiais pipirais, Worcestershire padažu ir trupučiu citrinos sulčių. Nukėlęs nuo ugnies įmaišiau gabalėlį šalto sviesto bei smulkintų krapų.
Patiekiau su gausiu voveraičių padažu ir traškiai apkepintomis voveraitėmis.

If you love potato kugel, this version is definitely worth trying.
I fried smoked pork belly with onions until the pork released its fat and became nicely golden. Then I added a few pieces of butter and mixed everything with grated potatoes. I poured over hot milk and seasoned it with salt, finely ground black pepper, grated nutmeg, ground dried chanterelles, and a pinch of ground bay leaves. After mixing everything well, I baked it at 220°C (425°F) until the kugel was beautifully golden and fully cooked.
While the kugel was baking, I made the sauce. I cooked the onions until lightly golden, then added finely chopped chanterelles, garlic, and fresh thyme. I sautéed the mushrooms until all their moisture had evaporated and they started to caramelize. Then I poured in brandy, cooked off the alcohol, added stock and heavy cream, and simmered the sauce until slightly thickened. Finally, I stirred in sour cream and seasoned it with salt, black pepper, Worcestershire sauce, and a squeeze of lemon juice. Off the heat, I finished it with a k**b of cold butter and freshly chopped dill.
Served with plenty of creamy chanterelle sauce and crispy pan-fried chanterelles.
