湯水篇|冬瓜 生熟薏米 燈芯草飲 清心火 去濕 水腫 (Eng Sub) Winter melon & Semen Coicis & Cooked Barley with Junci Medulla

如常有暈眩、 懷孕者 ,萬萬不要飲冬瓜水
People with dizziness or pregnant women should NOT drink winter melon water.

份量serving : 3 人ppl
烹調時間 cooking time : 50分鐘 minutes

材料 Ingredients
684g 冬瓜 winter melon
36g 生薏仁 Semen Coicis
36g 熟薏仁 Cooked Barley
1 札 ( 8 g) 條狀白色燈芯草(莖髓) Dengxincao; Junci Medulla
2000ml 清水 water
酙量QS 冰糖 cubic sugar

方法Method :
1. 冬瓜洗淨留皮,切大塊。
Wash the winter melon with the skin. And cut it into large pieces.

2. 放入生薏仁、熟薏仁、冬瓜、白色燈芯草在2000ml清水中,開大火。
Put the winter melon, Semen Coicis, Cooked Barley and Dengxincao into 2000ml of water. Turn to high heat.

3. 30分鐘後,轉中火。
Turn to med heat after 30 minutes of cooking.

4. 10分鐘後,加入冰糖,轉小火。
Add the cubed sugar to the soup after 10minutes of cooking. And turn to low heat.

5. 10分鐘後,關火。
Turn off the fire after 10 more minutes of cooking,

湯水篇|蕃茄 南瓜 豬肉湯 清甜開胃 快速 家常湯 (Eng Sub) Tomato & Pumpkin Pork Soup Simple and Quick Soup

補骨質 補血 蛋白質 細胞修復
Pumpkin effects:
Nourishes bones, replenishes blood, provides protein, and aids in cell repair.

不宜食多的人士 :
因溫性 易引起濕熱 糖尿病者少食 易疴瀉者 容易敏感者
People who should avoid eating too much:
Those with a warm constitution, as it may easily cause damp heat; diabetics should eat less; those prone to diarrhoea; and those who are easily sensitive.

成份ingredients :
586 g 蕃茄 tomato
446 g 南瓜 pumpkin
418g 豬肉眼 pork rib eye
4片 (slices) 薑片 ginger slice
1750ml清水water

醃肉料: Marinated Meat Ingredients:
1tsp (茶匙) 豆粉 soy flour
QS少量 鹽 salt
1 tsp (茶匙) 生油 Oil
QS少量 生抽 Light soy sauce

方法 Method :
1. 沖洗南瓜,擦乾外皮,切大塊
Wash the pumpkin and dry the skin. Cut into large pieces.

2. 沖洗蕃茄,切半。
Wash the tomato and cut it in half.

3. 豬肉加調料,醃5分鐘。
Marinate the pork rib eye with the sauce for 5 minutes.

4. 1750ml清水加薑片。
沸騰後,加入肉、南瓜,轉大火。
Add the ginger to 1750ml of water.
Add the pork rib eye and pumpkin to boiling water. Turn to high heat.

5. 15分鐘後,加入蕃茄。
Add the tomato after 15 minutes of cooking.

6. 再煮15分鐘後,關火。
Cook another 15 minutes. Turn off the heat.

湯水篇|紫菜 金菇 雞絲湯 快速 家常湯 (Eng Sub) Seaweed and enoki mushroom with chicken shank Simple and Quick Soup

材料 : Ingredients
半片 15g紫菜 dry Seaweed
1 袋 200g 金菇 Golden Needle Mushroom (Enokitake)
324g 已煮的雞胸、雞脾肉 Cooked Chicken breast/ spleen
254g 豬𦟌肉Pork shank meat
6 片 薑片 sliced ginger
2 粒 紅蔥頭 shallots
2000 ml 清水 water

方法 Method :
1. 先用清水沖清和浸泡紫菜。
Wash and soak the seaweed in clean water.

2. 金菇切去根部,再沖洗。撕開為條狀。
Cut off the root of the golden needle mushrooms. Wash it and shred.

3. 雞肉、豬肉切為條絲狀。中火在鑊中與紅蔥頭一同爆香,直至轉金黃色,備用。
Shred the chicken and pork meat.
Cook it with ginger and shallot on medium heat, until it turns golden.

4. 豬肉用鹽、生抽、豆粉、生油醃10-15分鐘。
在鑊中放薑片、紅蔥頭和豬肉爆香,備用。
Marinate the pork shank meat with salt, light soy sauce, cornstarch, and oil for 10-15 minutes.
Cook it with ginger and shallot in med heat.

5. 2000 ml 清水中,放入薑片、雞骨。轉大火。
Put the ginger and chicken bones into 2000ml of water. Turn to high heat.

6. 10分鐘後,待水沸騰。加入豬肉絲。轉中火。
Cook for 10 minutes until the water is boiling. Add the pork shredded meat. Turn to medium heat.

7. 2 分鐘後,放入金菇、爆香的雞絲肉
Add the Golden Needle Mushroom (Enokitake) and chicken strips after 2 minutes of cooking.

8. 2分鐘後,放入紫菜。
Add the seaweed after 2 minutes of cooking.

9. 4分鐘後,關火。
Turn off the heat after 4 minutes.

今天分享湯水是 雪耳煲水鴨加豬脊骨,
很多人用雪耳煲雞, 但都帶一點兒燥,
所以我買水鴨煲雪耳,
水鴨有滋陰作用,
很多人說早上起床口乾、 鼻乾
雪耳有潤肺 滋潤 養顏作用
這時候飲, 可以滋潤
身體不用如此的燥
Today I'm sharing a soup,
Ingredients: snow fungus, teal and pork spine bone
Many usually like to prepare the snow fungus with chicken
But it can be a bit hot
So I have the teal t, snow fungus
Teal has the nourishing properties
Many people say: “They wake up in the morning, feeling their mouth and nose are dry ”
Snow fungus helps to moisten the lungs, nourish the body, and improve complexion.
Drinking this in this season can provide our moisture,
so the body doesn't have to be so dry

份量 Serving: 3 - 4 人 ppl
烹調時間 Cooking time: 1小時 hr 20 分鐘 mins

材料 Ingredients:
1 個 ea (30g) 漳州雪耳 Zhangzhou White Fungus
1 隻 ea (380g) 急凍水鴨 frozen Teal
300 g 豬脊骨 Pork Spine Bone
3 粒 pcs 紅棗 Date Pulms
1/3 片 slice 陳皮 Dried Tangerine Peel
2 - 4 片 slice 厚切薑片 Thick Sliced Ginger
3000 ml 清水 water

方法 - method :
1. 沖洗 雪耳 3次。浸泡至變軟轉白。再沖洗。切除底部黑色硬塊。
Wash the Zhangzhou White Fungus 3 times.
Soak it until it becomes soft and white.
Wash it again and cut the bottom.

2. 沖洗 水鴨,放在沸騰的 薑片 水中,焯一會。
沖洗、去內臟、去毛 。
Wash the teal. Put it in boiling water with ginger for seconds.
Wash and remove internal organs and hair.

3. 沖洗 豬脊骨,汆水。
Wash the pork bones, then blanch them in boiling water.

4. 倒 3000ml 清水入煲內,開火。
Pour the 3000ml of water into the pot. Turn to high heat.

5. 沸騰後,加入 豬脊骨、陳皮、去核紅棗、雪耳。
When the water is boiling, put the pork spine bones, dried tangerine peel, pitted red dates, and white Fungus in.

6. 15分鐘後,加入汆水的 水鴨,轉中火。
Add the blanched teal after 15 mins of cooking. Turn to med heart.

7. 40分鐘後,轉小火。
Turn to low heat after 40 mins of cooking.

8. 15分鐘後,關火。
Turn off the fire after 15 mins of cooking.

湯水篇|羊肚菌栗子響螺頭豬骨湯 - Morel Chestnut Conch and Pork Soup

Nourish the Kidneys, Boost Qi, Moisten the Lungs, Clear heat, Relieve irritability, Tonify Deficiency, Relax Muscles and Tendons

份量 Serving:: 3 – 4 人

材料 - Ingredients:
10 g 乾羊肚菌 - Dried Morels
156 g 栗子 - Chestnut
2 隻 ea 急凍響螺頭 - Conch
4 粒 ea 乾冬菇 Dried Shiitake
136 g 豬骨 Pork bone
202 g 豬𦟌肉 Pork shane meat
3 ea 乾無花果 Dried Figs
2 片 ea 薑片 Ginger Slices
3500 ml 清水連浸羊肚菌水 Water include Soaking Morels water

方法 Methods :
1. 沖洗和浸泡冬菇。乾羊肚菌需沖洗4次,直至無沙粒。
Wash and soak the Morels and Shiitake.
Morels need to wash 4 times until no sand.

2. 沖洗栗子、豬骨及肉。豬骨及肉汆水。
Wash the Chestnut, pork bones and meat.
Blanch the pork bones and meat.

3. 響螺頭在薑片水中汆水,至有血泡出現。
沖洗,切半,再去除內臟。
Blanch the Conch in ginger water until bubble comes out.
Wash and cut half. Remove the internal organs.

4. 放 栗子、無花果和冬菇 在 3500ml 清水中。轉大火。
Put the chestnuts, figs and Shiitake into 3500ml water. Turn to high heat.

5. 煮10分鐘後,加入 豬骨及肉 於湯中。
Add the pork and bones into the soup after 10 minutes.

6. 30分鐘後,加入響螺頭。
Add the Conch after 30 minutes cooking from step 5.

7. 10分鐘後,加入羊肚菌連水。轉中大火。
Add the Morels and their soaking water into the soup after 10 minutes from step 6. Turn to med heat.

8. 30分鐘後,轉中小火。
Cook for another 30 minutes, then turn to low heat.

9. 再煮25分鐘後,關火。留煲內一會。
After 25 minutes, turn off the heat. Rest in the pot for a while before serving.

清除腸道、通便、清熱
Efficacy:
Clears the intestines, laxatives, and clears away heat

不宜以下人士多食 :
腎結石、體質虛寒
Not suitable for:
kidney stones, physical deficiency and the body is weak and cold

材料 Ingredients :
335g潺菜 Basella Alba
206g豬肉 pork meat
1個(pc) 布包豆腐 wrapped Bean Curd ( Tofu )
1個ea咸蛋 Salted egg
1個ea 皮蛋 Preserved egg
4片slice薑片 sliced ginger
2粒pc 蒜頭 garlic
1500ML 清水 water

方法 Method :
1. 沖洗潺菜,去莖留葉。
Wash the Basella Alba. Remove the stem but keep the leaves.

2. 沖洗豬肉,可切成塊狀或方形。
( 食可塊狀, 不食可方形)
Wash the pork meat, and cut it into small pieces.

3. 咸蛋、皮蛋去殼。
咸蛋只要蛋黃。
Remove the shells of both eggs.
Use the yolk of the Salted egg only.

4. 先放潺菜枝於1500清水中,轉大火。
add the Basella Alba branch into 1500 ml of water. Turn to high heat.

5. 煮10分鐘後,拿出潺菜莖。
加入肉類、蒜頭。
Take out the branch after 10 minutes of cooking,
Add the meat and garlic.

6. 煮15分鐘後,轉中火。
加入布包豆腐、食用油、潺菜葉。
Turn to med heat after 15min cooking,
Add the Tofu, oil, and Basella Alba leaves in.

7. 3分鐘後,加入咸蛋、皮蛋。
見有泡,可關火。
Add the egg after 3 min cooking.
Turn off the heat after the bubbles come.

瘰癧、癭瘤、乳癰、乳房脹痛、乳腺增生、甲状腺腫脹、淋巴结核、
Prunellae Spica:
Clearing liver fire, clearing heat, improving eyesight, redness and swelling and pain in the eyes, night pain in the eyeballs, dispersing knots and reducing swelling
scrofula, gall, mammary carbuncle, breast tenderness, breast hyperplasia, thyroid swelling, lymphadenopathy,

材料: Ingredients :
60 g夏枯草 Prunellae Spica
1/3 ea ( 16g ) 羅漢果 (特大果) monk fruit/luo han guo ( (XL size)
適量QS 片糖 Caramel Slab Sugar (for replacing monk fruit)
1/3 塊 (pc) 陳皮tangerine
2500ml 清水 water

做法 :
Method:
1. 清沖洗夏枯草、羅漢果。
Wash the Prunellae Spica and monk fruit.

2. 羅漢果撕成小碎。
Cut the monk fruit into small pieces.

3. 2500ml清水中,放入夏枯草、羅漢果。
Put the Prunellae Spica and monk fruit in 2500ml of water.

4. 開中火,煲45 分鐘。
Med heat for cooking 45min.

1個ea ( 500g ) 紅菜頭 beetroot
1條ea ( 448g ) 粟米 corn
40g 腰果 cashew
268g 豬𦟌骨 pork shank bone
167g 豬𦟌肉 pork shank meat
1 pc 厚薑片sliced thick ginger
1/3 pc 陳皮 tangerine peel
2250 ml 清水 water

方法 method :
1. 沖洗豬𦟌骨及豬𦟌肉, 然後汆水。
Wash the pork shank bones and shank meat, and blanch them in boiling water until the blood comes out.

2. 粟米去外皮,沖洗,切段。
Remove the corn skin and wash it. Cut it into pieces.

3. 紅菜頭、腰果沖洗。
紅菜頭切去頭部,去外皮,切角形。
Wash the beetroot and cashew.
Cut off the beetroot head and peel the skin. Cut into pieces.

4. 先把粟米、薑片、陳皮放入2250ml清水中,轉大火。
Put the corn, ginger, and tangerine peel into 2250ml of water. Turn to high heat.

5. 20分鐘後,放入豬𦟌骨、豬𦟌肉,轉中大火。
Put the bone and meat in the soup after 20 minutes of cooking. And turn to medium heat.

6. 30分鐘後,放入紅菜頭,轉中小火。
Put the beetroot after the 30-minute cooking step 5. Turn to med low heat.

7. 煮40分鐘後,關火。
Turn off the heat after 40 minutes of cooking step 6.

3 錢 (6 g) 移山蔘 Transplant wild ginseng

方法 Method :
1. 沖洗豬𦟌肉,去除多餘肥脂。
Wash the pork shank meat. Remove the extra fat.

2. 先薑片在燉盅底,再放入移山蔘。
Place ginger slices at the bottom of the stewing pot. Then add the Transplant wild ginseng.

3. 把一半的肉放在薑及移山蔘上,再放上天麻。
Put half of the meat on top of the Transplant wild ginseng. Then add the Gastrodiae Rhizoma.

4. 再放另一半的肉在天麻上。
Then add the other half of the meat on top.

5. 蓋好燉盅蓋,用保鮮紙或紗紙把燉盅包蓋。
Cover the stewing pot lid with cling film.

6. 明火燉3小時左右。
或先明火燉1小時,再轉中火燉3小時。
Stew over high heat for about 3 hours.
Or stew over high heat for 1 hour. Then turn to medium heat for 3 hours.

湯水篇|鷓鴣 豬脊湯 燉肉汁2用 (Eng Sub) Partridge and back bone Soup Meat Broth 2nd use

材料 Ingredients :
1 隻ea ( 340g ) 90日鷓鴣90 Days Partridge ( Francolin)
247g 豬脊骨 Pork back bone
2 片薑片sliced ginger
2500ml 清水 water
1/3塊 (pc) 陳皮 Tangerine Peel

燉豬𦟌肉汁材料 Ingredients of stewing meat juice:(燉後重用 reboling after stewing)
1片3.75g 天麻Gastrodiae Rhizoma
1條 pc 豬𦟌肉 pork shank meat
1片pc 薑片sliced ginger
3 錢 12 g 移山蔘Transplant wild ginseng

方法 Method :
1. 沖洗豬脊骨、鷓鴣。
放入沸騰水中,汆出去去腥味。
Wash the Pork back bone and Partridge.
Blanch them in boiling water to reduce the smell.

2. 2500ml清水煮至沸騰。
Boil 2500ml of water.
3.. 5分鐘後,加入豬脊骨、薑、陳皮,轉大火。
Put the Pork back bone, ginger, and Tangerine Peel in 2500ml boiling water. Then turn to high heat.
4. 5分鐘後,加入鷓鴣。
Then add the Partridge after 5 minutes of boiling.
5. 再煮45分鐘後,加入燉過的肉汁料,轉中小火。
Add the braised meat sauce after 45 minutes of cooking. And turn to medium-low heat.
6. 再煮50分鐘後熄火。
Cook for 50 minutes and then turn off the heat.

材料 - Ingredients:
抹醬 - Spread
鮮奶油乳酪 Cream Cheese - 125 g
鮮奶油 Fresh Cream - 125g
檸檬皮 Lemon Zest - 半個 half
檸檬汁 Lemon Juice - 半個 half
蒔蘿 Dill - 4 - 5 條 stick

三文魚牛油果吐司 - Salmon Avocado Toast
麵包 Bread - 2 片 slices
三文魚片 Salmon Slice - 8片 slices
濃縮意大利黑醋 Balsamic vinegar Glaze - 適量 TT
牛油果 Avocado - 1 個 whole
酸豆 Capers - 10 - 15 粒 pcs
鹽和黑椒 Salt and black pepper - 適量 QS

做法 - Method
1. 先把 鮮奶油乳酪 打發至軟化, 倒入 鮮奶油 混合至軟化, 加入 檸檬皮 和 檸檬汁 混合, 備用;
First, whip the cream cheese until softened, pour in the fresh cream and mix until softened, add lemon zest and lemon juice mix well, and set aside;

2. 準備平底鑊, 中火放入 麵包片, 把 麵包片 的2面都烘至脆身, 離火備用;
Prepare a flat pan, then turn to medium heat and add bread slices, toast the bread on both sides until crispy, after that remove from heat and set aside;

3. 牛油果去皮, 去核, 切片, 備用;
Peel, remove seed and sliced avocado, then set aside;

4. 酸豆 拍扁, 切碎, 備用;
Flatten and chop capers, set aside;

5. 取出已烘好的 麵包片, 在 麵包片 上抹上 抹醬, 放上 牛油果片 和 三文魚片, 擠少量 濃縮意大利黑醋, 灑上 酸豆碎, 最後 灑上 鹽 和 黑椒, 即可。
Take out the toast, spread the spread on it, and place the avocado slices and salmon slices on top. Squeeze some Balsamic vinegar Glaze, sprinkle with chopped capers, and finish with a sprinkle of salt and black pepper.
