𝙈𝙀𝘼𝙏𝘽𝘼𝙇𝙇𝙎 𝙄𝙉 𝙈𝙐𝙎𝙃𝙍𝙊𝙊𝙈 𝘾𝙍𝙀𝘼𝙈 𝙎𝘼𝙐𝘾𝙀
yield: 6 servings
𝘐𝘯𝘨𝘳𝘦𝘥𝘪𝘦𝘯𝘵𝘴:
• 1 lb ground beef
• 200 g ground pork
• 1 cup panko breadcrumbs
• 3/4 cup fresh milk
• 1 large egg
• 3/4 cup grated Parmesan cheese
• 2 tbsp chopped fresh parsley
• 1 tsp salt
• 1/2 tsp black pepper
• 2 tbsp olive oil
• 1 small onion, chopped
• 2 cloves garlic, minced
• 1 cup carrots, sliced
• 1 cup mushrooms, sliced
• 1 cup chicken broth
• 1 cup heavy cream
• 1 tsp dried thyme
• Salt and pepper to taste
• Fresh parsley, chopped (for garnish)
𝘗𝘳𝘰𝘤𝘦𝘥𝘶𝘳𝘦:
1. Soak breadcrumbs in milk on a large bowl. Let it stand for 2-3 minutes before adding the ground beef, ground pork, egg, Parmesan, salt & pepper. Mix by hand until well-combined. Shape into ping-pong sized balls.
2. In a large skillet, heat the olive oil over medium heat. Add the the meatballs and cook until browned on all sides, about 5-7 minutes. Remove and set aside.
3. Add the chopped onion and garlic to the skillet and sauté until softened, about 3 minutes. Add the carrots and mushrooms to the skillet and cook for another 4-5 minutes, stirring occasionally.
4. Pour in the chicken broth. Let the broth simmer for about 5 minutes. Stir in the heavy cream and dried thyme. Season with salt, and pepper. Let the sauce simmer for 5-7 minutes, until it thickens slightly.
6. Add the cooked meatballs back into the skillet, stirring gently to coat in the sauce. Let everything simmer together for another 5 minutes.
6. Garnish with freshly chopped parsley before serving. Enjoy!
