🍕 Pinsa Perfection! 🍕

Ever buy an ingredient without a plan? That's what happened with my pinsa purchase a few weeks ago. Today, on this holiday, wanting to spend less time in the kitchen, I found my opportunity to use it, topping it with caponata and tuna for a quick oven delight!

The result was a delicious, nutrient-dense lunch that just contained around 360 calories, leaving just enough room for an 85-calorie Christmassy chocolate treat, and yet keeping us within our calorie budget.

Because as we always say here at food Freedom for Life: "All foods fit - It’s all about portion control, not deprivation!" 🎉✨

🌟 Kitchen Mix-Up Magic! 🌟

What was meant to be a vibrantly colourful lentil and couscous salad with bell peppers, green peas and chicken strips turned into a delightful surprise when minced beef stepped in by mistake. 🌈🥗

The beef may have add a few extra calories, but the result was so delicious that this happy accident is now a recipe keeper! 🥳✨

🌅 A Sunday Morning Well Spent 🌅

Today, my mom and I embraced a relaxed yet productive start to our day. Instead of our usual 5 AM rise, we savoured a couple of extra hours of rest and kicked off at 7:30 AM, and kicked off the day with a:

🍳 Special Breakfast Treat made of
Scrambled eggs
Turkey sausages
Creamy skyr cheese on protein bread

This was followed by a
🚶‍♀️ Morning Stroll: A refreshing 20-minute walk to the shop (and back), scoring our step goals for the day. We paused the errand to enjoy a cappuccino break – quality time and caffeine combined!

🏡 Back by 9:30 AM: Prepping for today's lunch as well as some meals through the week will soon begin, so that by noon, we'll have a head-start, leaving the afternoon free to enjoy at our leisure.

🍲 Stew Showdown: A Tale of Two Delicious Dishes 🌿

Our culinary exploration tendencies recently led us to explore and compare two unapologetically delicious stews - a Lentil, Sweet Potato, and Turkey Stew and a classic Beef Stew. Both meals provided generous portions and hearty satisfaction with every mouthful, leaving little to be desired!

The Outcome:

👉 The turkey stew packed a flavourful punch and also came in at about 100 calories less than the beef stew. This gave me the freedom to indulge in a small dessert, whereas mum simply opted to enjoy those 100 fewer calories to help stay on track with her calorie goal. (Remember she's currently in a deficit whereas I am in maintenance).

📝 Balancing the Weekend: Combining Freedom and Fun without sabotaging our goals 🌟

Our weekend to-do list is an ideal blend of routine and freedom, with a dash of adventure and self-care. Here’s what we had planned this weekend:

Rest: The weekend is all about giving oneself the permission to sleep in or sneak in an afternoon siesta. After all, who says you can’t be productive while resting? 😴

Exercise: Whether sticking to our usual routine or trying something new and exciting, moving our bodies is something we do joyfully, rather than out of obligation 🏋️‍♂️

Meal Planning: Keeping it simple. staying on track, but leaving some room for spontaneity. 🍽️

Grocery Shopping: Armed with a list but open to inspiration, we're always ready to adapt if a spontaneous ingredient catches our eyes. 🛒

Meal Prepping: Aimed at preparing enough so that meals come together effortlessly on the busier days. It’s all about being efficiently rebellious! 🍳

Dining Out: Part of our rest and relaxation, we enjoy dining out mindfully, concentrating on enjoyment, the experience and the tastes without overindulging! 🍴

Hitting Our Macros: For us, that’s approx. 50% carbs, 30% protein, and 20% fat. 📊

Staying Hydrated: An obvious one, but made exciting with water infusions. Because hydration doesn’t have to be boring, even on a weekend! 💧

🍽️ Exploring Flavours: Our Recent Culinary Creations 🌿

As the temperatures drop, our kitchen has been bustling with a vibrant mix of traditional and international flavours. Here’s a sneak peek into some of the delightful meals we’ve enjoyed recently:

Barley Soup: Low in calories and nutrient-dense, this simple yet delicious family favourite will be making frequent appearances over the coming weeks and months. Perfect for cosying up as the days get colder. 🍲

Lentil, Sweet Potato, and Turkey Stew: A hearty, flavour-packed dish brimming with nutrients that warms both body and soul.

Mexican Chicken with Rice: A colourful and satisfying concoction that delivers great nutritional value, ideal for adding a bit of zest to any mealtime. 🌶️

Kawlata: A soothing traditional Maltese vegetable soup which we like to enhance with a pork sausage, to elevate its calorie, protein, and flavour profile while keeping comfort at the forefront.

And these are just the dishes we’ve captured in the attached photo! We’ve also enjoyed the likes of a Portuguese-inspired chicken sandwich with crusty Maltese bread, paella, pasta with roast vegetables and tuna, and a comforting chicken and rice soup. This diversity ensures our meals are rich in taste and nutrients, supporting a well-rounded lifestyle that leaves little room for cravings.

🍝 Embracing Carbs: Energy and Enjoyment 🥖

Reflecting on our recent meal plan, I wanted to dive deeper into an aspect that often sparks debate: CARBOHYDRATES. Yes, we included delicious pasta, bread, potatoes, rice and barley last week —ingredients that many diets restrict, but for us, they play a crucial role in fuelling our lives.

Here's why we embrace them:

Fuel for Energy: Carbs are excellent sources of energy. Before adopting our current way of eating, we limited or excluded these foods, leaving us feeling lethargic and even dizzy, especially during and/or post workouts. Now, they're an integral part of our diet, supporting our active lifestyle.

Craving Control: They’re simply delicious! Eliminating them created intense cravings. By incorporating them mindfully, we satisfy our taste buds and avoid the cycle of deprivation and overconsumption.

Nutrient-Rich Choices: Whenever possible, we swap refined carbs for unrefined options. These alternatives might not always be lower in calories, but they’re far richer in nutrients, enhancing our overall diet quality.

Comfort Without Bloat: We’ve learned how to enjoy these foods without feeling bloated, thanks to portion control and balanced meal planning.

Our journey with carbs has been about understanding balance and embracing variety. By choosing to enjoy these foods mindfully, we nurture both our bodies and our happiness.
