Zesty Lamb Chops Marinated in Pickled Chili & Fresh Mint
Ingredients:
8 lamb chops (about 1-inch thick)
3 tablespoons pickled red chili, finely chopped
1/2 cup fresh mint leaves, finely chopped
3 cloves garlic, minced
Zest and juice of 1 lemon
3 tablespoons olive oil
1 tablespoon honey
1 teaspoon ground cumin
Salt and freshly ground black pepper, to taste
Fresh mint sprigs and lemon wedges for garnish
Directions:
In a medium bowl, whisk together pickled chili, mint, garlic, lemon zest and juice, olive oil, honey, cumin, salt, and pepper until well combined.
Place the lamb chops in a large ziplock bag or shallow dish and pour the marinade over them, ensuring each chop is well coated.
Seal the bag or cover the dish and refrigerate for at least 2 hours, or overnight for deeper flavor.
Remove the lamb from the fridge 30 minutes before cooking to bring it to room temperature.
Preheat a grill or grill pan over medium-high heat. Brush lightly with oil.
Grill lamb chops for 3-4 minutes per side for medium-rare, or until desired doneness.
Let rest for 5 minutes before serving. Garnish with fresh mint sprigs and lemon wedges.
