As global demand for and continues to grow, so do the environmental and social responsibilities of the agave spirits industry.

Last week at Tales of the Cocktail, Campari Academy US and Casa Lumbre co-hosted a forward-thinking seminar:
The ABCs of Agave Biology & Resilience – Sustainability Lessons from Nature.

Led by agave expert Iván Saldaña Oyarzábal, Diego Cantu and Mary Palac, the session unpacked some of the most pressing issues facing our industry today—from deforestation and monoculture farming to biodiversity loss and labor equity.

Key takeaway: The agave plant is more than a crop; it’s a teacher. Its biology offers vital lessons on resilience, resource efficiency, and how traditional practices can inform modern, sustainable production models.

As producers, educators, and partners in this industry, we have an opportunity—and a responsibility—to champion conscious sourcing, support local communities, and preserve the cultural and environmental heritage that makes agave spirits truly unique.
