De cochinita pibil o tinga de pollo

(slow-roasted pulled pork or shredded chicken in a smoky sauce)

This is a traditional Mexican dish, the cochinita pibil (pork) is from the Yucatán Peninsula. This is cooked low and slow overnight to ensure maximum flavour.

Tingo de pollo is of Pueblan origin, this is cooked with onion, tomato, Chipotle and adobo.

We are are at Redruth Buttermarket on the first Saturday of each month and in the Millennium Hall in Portreath on the last Sunday of each month. We hope to see you there!
