Carnitas might be the most underrated taco in Baja…
but when it’s done right, nothing beats it.

Crispy edges. Juicy pork. Fresh tortillas. Salsa that actually hits. creamy Guacamole 🥑

Some of the best I’ve had are from:
Market stalls (photo from Primo Tapia - one of the corner of the market)
Street vendors
Low-key permanent stands
Not the flashy places.

Who has the BEST carnitas tacos in Ensenada / Rosarito?

Some American-owned restaurants in Rosarito aren’t even paying the legal minimum wage — never mind a fair one.

The official minimum wage in Mexico for 2026 is:
👉 315 pesos per day nationally
👉 440.87 pesos per day in the northern border zone (including Baja)

…and there are still places paying less than that.

I know of at least two businesses right now doing exactly that. No I won't name them.

Let that sink in.

Charging U.S.-level prices — yes, San Diego prices —
while paying below minimum wage in Mexico…

…and then acting shocked when:

• Staff don’t stay
• Service is bad
• Locals don’t support you
• Tourists don’t come back

That’s not “business being tough” —
that’s a broken model.

You’re expecting people to work a full day
for less than what you expect your customers to spend on lunch.

And you wonder why your restaurant is empty?

People aren’t blind.

They feel it — in the service, the energy, the experience.

If you don’t respect the place you’re operating in,
the place will reject your business.

Simple as that.
