Korean Braised Beef Short Ribs
Recipe
Ingredients:
4 beef short ribs (about 2½ – 3 lb / 1.1 – 1.4 kg), trimmed of excess fat
Salt and freshly ground black pepper
2 tbsp canola or vegetable oil
1 medium onion, thinly sliced vertically
8 large cloves garlic, sliced
2 tbsp minced fresh ginger
2 cups beef broth
½ cup soy sauce (or tamari/coconut aminos)
¼ cup brown sugar or coconut sugar
2 tbsp unseasoned rice vinegar
2 tbsp gochujang (Korean fermented chili paste)
1 tbsp toasted sesame oil
2 tbsp cornstarch (for thickening)
2 bunches scallions, trimmed
2 tbsp toasted sesame seeds
Optional: kimchi, shredded carrots, steamed rice (for serving)
Directions:
Season the short ribs generously with salt and pepper on all sides.
Heat oil in a large skillet or Dutch oven over medium‑high heat. Brown the short ribs on all sides, about 2–3 minutes per side, then transfer them to your slow cooker or keep in the Dutch oven if braising on the stovetop.
In a bowl, whisk together beef broth, soy sauce, brown sugar, rice vinegar, gochujang, minced ginger, garlic, and sesame oil. Pour this sauce over the browned short ribs.
Slow Cooker Method: Cover and cook on LOW for 8–10 hours or HIGH for 4–6 hours until the beef is fall‑off‑the‑bone tender.
Stovetop/Oven Method: Cover and simmer on the stovetop over low heat 2½–3 hours, or braise in a 325 °F (160 °C) oven for the same time until tender.
When done, remove the ribs to a plate. Mix the cornstarch with a few tablespoons of the braising liquid until smooth, then stir this slurry back into the pot and simmer uncovered until the sauce thickens slightly.
Return the ribs to the sauce and let them heat through. Garnish with scallions and toasted sesame seeds. Serve hot with steamed rice, kimchi, and shredded carrots for a complete meal.
