Hi today we want to share recipe how to make "Buttered Popcorn Cookies"
Ingredients:
2 table spoon of vegetable oil
45g of popcorn kernels
Œ tea spoon of table salt
1 table spoon of melted butter
115g of softened butter
100g of light brown sugar
65g of granulated sugar
1 large egg
œ tea spoon of vanilla extract
155g plain flour
œ tea spoon of baking soda
Preparation method:
1. Pour oil into pan and add popcorn kernel, shimmying the pan around to make sure it lies in one layer.
2. Once the kernels begin to pop, keep the pan moving until all popped for about 5-7 minutes.
3. Toss some table salt and melted butter over the popcorn before you transfer the popcorn into the bowl.
4. While waiting the popcorn to cool, preheat oven to 180°/fan 160°C/Gas 4.
5. Then mix softened butter, brown sugar, granulated sugar, egg and vanilla extract until it smooth.
6. In another bowl, whisk the flour and baking soda together before you pour it into the butter-sugar mixture.
7. Fold in the cooled popcorn in order for evenly distributed through the batter.
8. Scoop the dough in tablespoon sized mounds onto parchment-lined baking sheet within 5 cm apart.
9. Bake it for 10-12 minutes until it turn light brown. Sit them on the hot baking sheet for a few minutes before transfer them to rack.
