關於熟成蛋糕和回油,我們來打個比方。
很常都會有人強調著迫問:「你的蛋糕是今天早上新鮮做的嗎?」
親愛的,如果紅酒只能喝剛釀好的,那酒莊都要倒閉了。
因為真材實料,所以我們賣的蛋糕需要經過「熟成」和 「回油」這些過程。
熟成,不是放很久,是讓味道「在該到的時候跑出來」。
回油,讓油脂與食材慢慢融合,蛋糕會從剛出爐的略顯乾燥,變得濕潤綿密,香氣也更沉穩濃郁。
為什麼要經過熟成和回油這些過程呢?因為我們不用預拌粉。
用預拌粉的話,蛋糕當天就能跟客人見面,又快又穩定。
但我們偏偏選了一條比較難的路——用天然的食材,結果它們剛認識還不熟,必須在冰箱裡「交朋友」24-48小時,等感情好了,香氣跟濕潤度才會「開竅」。
Here’s a little analogy to explain cake aging and oil return.
People often ask, pressing for an answer: “Was your cake freshly made this morning?”
Well, if wine could only be enjoyed right after it’s made, wineries would be out of business.
Because we use real, high-quality ingredients, our cakes go through a process of “aging” and “oil return.”
Aging doesn’t mean sitting around for ages—it’s about letting the flavors “emerge at just the right moment.”
Oil return is when the fats slowly meld with the other ingredients, transforming the cake from slightly dry right out of the oven to moist, tender, and deeply aromatic.
So why go through aging and oil return? Because we don’t use pre-mixed cake mixes.
With pre-mixed blends, cakes are ready to meet customers the same day—quick and consistent.
But we choose the harder path—using natural ingredients. At first, they’re still getting to know each other, so they need 24 to 48 hours in the fridge to “become friends.” Once they’re well acquainted, that’s when the aroma and moisture truly “click.”
