Tauhu Begedil Recipe Description
People have been making bergedil since time immemorial . Variously spelled begerdil, begedil or perkedel, each culture has its own versions depending on the local ingredients. But the common ingredient in this fried patty is the potato.

The cutlet is usually made with leftover meat that is repackaged into bite-size morsels and eaten on-the-run as a snack or lunch the next day.

In recent years, the traditional bergedil has enjoyed a new repackaging, this time with tofu puffs. You can find tauhu bergedil these days at many pop-up stalls and especially at the Ramadan bazaar.

You will require all the basic ingredients of a bergedil with the addition of the tofu puff, which you will need to hollow out to be filled with the potato stuffing. The excavated tofu mass can be deep fried and served on the side with the tauhu bergedil. It tastes amazing with the dipping sauce.

Or if you want to make a vegetarian version of this dish, the tofu mass can be stirred into the stuffing mixture along with diced mushrooms, and stuffed back into the tofu puff cavity.

Some recipes call for the potatoes to be boiled or steamed before being mashed, but the traditional Malay method is to fry them. Not only does it reduce the amount of moisture in the bergedil, it also adds a layer of flavour you will not get by boiling or steaming them.

Another way to layer in more flavour is to fry your own shallots rather than using store-bought fried shallots. The remaining oil from frying the shallots imparts a tremendous amount of flavour to the meat when sautéed in it.

The traditional meat in bergedil is ground beef, but you may use chicken or other meats instead. A vegetarian option is to substitute mushrooms for the meat. You may use fresh shiitake mushrooms, or soak dried shiitake mushrooms in water, then sauté the finely diced mushrooms and tofu mass in the shallot oil.

So as not to soak up too much egg batter, dip the stuffed tofu puffs in the batter just before dropping them into the hot oil. Because all the stuffing is already fully cooked, the puffs just need to fry for a few minutes on both sides until it is lightly golden and crispy.

They keep well in the refrigerator, and you can reheat them in the oven or toaster oven to crisp up again before serving.

Recipe Ingredient
6 tablespoons cooking oil
150g shallots, sliced or 50g fried shallots
300g minced chicken or beef
750g potatoes, peeled
4 cups cooking oil for deep-frying
50g scallions, diced
50g cilantro, minced
salt
pepper
300g tofu puff
For batter:
2 eggs
1 tsp cornstarch
For dipping sauce:
3 pods Thai chilli
3 pods bird's eye chilli
1 clove garlic
2 tsp sugar
2 tbsp soy sauce
juice from 1 lime

Instructions
1. Fry shallots in 6 tablespoons of oil until lightly brown and crispy.
2. Pat dry excess oil from fried shallots on kitchen towels. Set aside.
3. In remaining oil, fry minced meat until browned. Set aside.
4. Cut peeled potatoes into half-centimetre-thick slices. Wash off starch with water and drain on a wire strainer to dry.
5. Fry potato slices in hot oil until lightly golden. Mash fried potatoes into coarse chunks.
6. Stir in browned meat, cilantro, scallions, fried shallots and season with salt and pepper to taste.
7. Cut an X across the top of the tofu puff, and hollow out tofu mass from the cavity. Gather balls of potato mixture and stuff into the tofu puff cavity.
8. Beat the eggs with cornstarch until combined. Dip the tofu puffs into batter and deep-fry until light golden and crispy.
9. When all the tauhu bergedil are fried, deep-fry remaining tofu mass to serve on the side.
10. Put all of the dipping sauce ingredients into an electric mill and blend until fine.
11. Garnish tauhu bergedil with a sprinkle of fried shallots, diced red chilies and minced cilantro served with dipping sauce.

Uses of Parsley:
• One of the major uses of parsley is as garnish. It gives dishes a good “finished” look and the bright green contrasts well.
• It is also often used- along with other herbs- as part of the process of making stock. My “Homemade Vegetable & Chicken Broth” uses parsley.
• A topping for salads, soups, or open-faced sandwiches.
• A variety of spice mixes, including an Italian version of salsa verde.
• Dips and cheese.
• A final major use is in cooked dishes. As I said, it is the most popular spice in the world…many, many cooked dishes call for the spice. Flat-leaf parsley is preferred for cooked dishes as it holds up better to heat.

Health Benefits: I’m going to be blunt: if an ingredient exists, there are people touting that it is a miracle cure for one thing for another. Parsley contains a good amount of Vitamin K and Iron.

How to Store Fresh Parsley:
Basic storage includes washing them gently, then using paper towels to gently press out any excess water. Arrange them lengthwise in a single layer on a slightly damp paper towel, rolling them up like a jelly roll, then transfer the bundle to a plastic zipper lock bag or wrap it in plastic wrap. Store in the refrigerator.

Here is the recipe for Spicy soy sauce, which well known as "Sambal Kicap".

'Sambal kicap' is a spicy sweet soy sauce dip and is a favourite condiment for dishes in Indonesia and Malaysia. Goes well with dishes like ikan bakar (grilled fish), seafood and even bakso (soup noodles).

Ingredients:
1 cup bird-eye chillies
1 shallot(s)
1 garlic clove(s)
1⁄2 cup oil
3⁄4 cup sweet soy sauce
1⁄4 tsp salt

Steps to Prepare:
Step 1:
Remove the chilli stems. Remove skin from shallots and garlic. Rinse and pat dry with a kitchen towel.

Step 2:
In a pan with some oil heated over medium heat, add chillies, shallots and garlic. Sauté until fragrant.

Step 3:
Blend fried ingredients until smooth. You may also pound them instead using a pestle and mortar. Once smooth, add sweet soy sauce and salt. Mix well.

Crispy Fried Shallots
Ingredients:
1. 8 small shallots, peeled
2. Vegetable oil (for frying; about 1¼ cups)
3. Salt
Preparation:
Step 1
Set a fine-mesh strainer over a medium heatproof bowl. Thinly slice shallots crosswise into rings on a mandoline (they should be about the thickness of a dime).

Step 2
Place shallots in a medium saucepan and pour in oil to submerge. Set over medium-low heat and cook, stirring often with a fork to encourage rings to separate, until shallots are golden brown, 20–25 minutes. (Keep an eye on them; once they start to brown they’ll darken fast.)

Step 3
Pour shallots into strainer to drain, then transfer to paper towels. Season with salt and let cool. Reserve shallot oil for another use, like vinaigrettes, stir-fries, and soups.

Step 4
Do Ahead: Shallots can be fried 5 days ahead. Store airtight at room temperature.

How To Store Tofu
- Preserving leftover tofu that has been taken out of its original packaging is easy. Simply store the tofu in a container filled with clean and cold water in the fridge. Cook and consume leftover tofu within two or three days, but change the water in the container daily to preserve the tofu's freshness.
Can you freeze leftovers?
- Tofu freezes but it will become spongy in texture and oftentimes changes to a darkish caramel color. Should you choose to freeze it, first drain the excess water. Then you can freeze in a plastic baggy or plastic container. To defrost, it is recommended to let thaw in the refrigerator or in the microwave on a defrost setting.

BAHAN-BAHAN:
• Tauhu pok/tauhu kering secukupnya
BAHAN INTI:
• Ubi kentang – bergantung pada jumlah tauhu yang nak dibuat
• Bawang – potong dadu
• Daging kisar – lebih banyak lebih sedap
• Daun sup – dicincang
• Serbuk lada sulah & serbuk lada hitam secukupnya
• Garam dan perasa secukupnya
• Minyak untuk menumis

BAHAN SALUT:
• Telur secukupnya
• Sedikit garam

CARA MEMASAK:

1. Panaskan sedikit minyak dan tumis bawang dan daging kisar hingga masak. Kemudian masukkan daun sup, serbuk lada sulah, serbuk lada hitam, garam dan perasa dengan secukupnya. Gaul rata. Angkat.

2. Kupas ubi kentang dan rebus hingga empuk. Tambah sedikit garam kemudian lenyek hingga halus.

3. Satukan daging yang ditumis tadi dengan ubi kentang lenyek. Gaul rata hingga sebati.

4. Bulat-bulatkan inti supaya senang untuk disumbat ke dalam tauhu.

5. Masukkan bebola kentang ke dalam tauhu yang dipotong sedikit. Kemudian celupkan tauhu ke dalam bancuhan telur yang telah dipukul dengan sedikit garam.

6. Goreng hingga keperangan. Angkat dan nikmati bersama sambal kicap.
