🌶️ Nyonya Sambal Paste — Made From Scratch

The heart of a good Nyonya dish starts with a beautiful sambal. ❤️🌶️

No shortcut for mine — I prepare it from scratch with fresh aromatics and traditional ingredients, blended together into a fragrant, rich sambal paste.

🌶️ Dried chillies
🌶️ Fresh red chillies
🧅 Shallots
🧄 Garlic
🌿 Lemongrass
🫚 Fresh turmeric & galangal
✨ Toasted belacan

Slowly cooked until the sambal becomes deeply aromatic, spicy, savoury and full of flavour.

This is the base I use for my Nyonya Sambal Petai with Minced Pork — that wonderful combination of fragrant sambal, crunchy petai and juicy minced pork. 😋

Homemade sambal. Fresh ingredients. Big Nyonya flavour. ❤️

Petai — you either LOVE it or run away from it! 😂

That unmistakable aroma, slightly bitter taste and creamy-crunchy bite are exactly what make petai so addictive. And it’s not just about the flavour — petai naturally provides fibre, plant protein, potassium and antioxidant compounds too. 🌱✨

For me, the best way to enjoy fresh petai has to be with a good sambal 🌶️🔥. Add some minced pork, cook everything until the sambal is rich and fragrant, then serve it with steaming hot rice… 简单就是好吃！ 🍚🤤

臭豆虽然味道“很有个性” 😂，但喜欢的人真的会越吃越上瘾！尤其配上香辣参巴和肉碎，超级下饭！🌶️💚
