Did you know that there are 2 moulting methods to obtain soft shell crab? One is by force and another is by its natural moulting process. Among the most crucial factor in soft‐shell crab production is the moult induction method. Shorter moult intervals means more soft‐shell crabs could be produced, increasing productivity and profit for farmers. This is forced moulting process.

At Texchem Food, we ensure that our soft shell crabs mature fully and moult naturally, producing soft shell crabs that bigger in size and better quality. Here is a short video of our soft shell crab farm in Myanmar, showing our employees feeding the crabs and constant monitoring of the crab’s condition during the moulting process.

Natural moulting process can be divided into 4 main stages: Intermoult, Premoult, Ecdysis and Postmoult. When the new exoskeleton is ready, it can be seen beneath the old exoskeleton in the form of a white line along the edges of the propodus segment of its swimming legs. When the white line changes to reddish coloration, moulting is expected within 24 to 48 hours. The new exoskeleton occurs immediately after moulting, as such soft shell crab is collected within the first 3 hours after moulting before the new exoskeleton starts to exhibit a firm texture.

Enjoy succulent fried soft shell crab. Here is a simple way to prepare them.

Ingredients :
1 can evaporated milk
1 large egg
6 soft shell crab
1 ½ teaspoons seasoned salt
1 ½ cups self-rising flour

Directions :
Step 1
Defrost Soft Shell Crab, rinse them and pat dry.
Step 2
Pour oil into a Dutch oven to a depth of 3 inches; heat to 360º.
Step 3
Whisk together 1 egg, 1 can evaporated milk and 1/4 cup water in a large bowl.
Step 4
Sprinkle crabs with seasoned salt.
Step 5
Dredge crabs in flour; dip in milk mixture, and dredge in flour again.
Step 6
Fry crabs in hot oil for 2 to 3 minutes on each side or until golden brown.
Step 7
Drain on a wire rack over paper towels.

Have you ever eaten soft shell crabs? People sometimes mistakenly think soft shell crabs are their own species, but they are simply crabs that have recently molted and shed their hard outer shell. The new shells harden in hours, leaving a small window to harvest these crabs in their soft-shell form. At Texchem Food, our soft shell crab is from the Scylla Serrata species (often called mangrove crab) and is marketed under our Seapack brand.

Soft shell crabs are low in calories, they contain almost no saturated fat, are high in protein and contains a unique combination of vitamins, minerals and nutrients, making them healthier than other meat options. In recent years, there is a growing market for frozen soft shell crabs in the USA, Japan, China and Singapore as a value-added product.
